To extend the season, food specialists at the Ontario Food Council, Ministry of Agriculture and Food, suggest freezing some for next winter. Pitting the cherries is hard on the hands, but the end result is worth the effort, Choose firm, plump, shiny cherries that are free from major blemishes. Black varieties are preferred for freezing, Wash well and pit the cherries. Place cherries in desired amounts in rigid containers. Make a cold syrup' of 2 cups sugar to 3 cups water, To preserve color • and flavor, dissolve 1/4 teaspoon of ascorbic acid in every 4 cups of syrup. Pour syrup over cherries and leave at least one inch head space to allow for expansion during freezing. Keep fruit submerged in the syrup by placing a small piece of crumpled moisture - resistant paper, like aluminum foil, between the fruit and the lid.
