Food specialists at the Ontario Ministry of Agriculture and Food suggest serving this tasty recipe for Green and Gold Broccoli. The crispy, cheese -flavored mixture, seasoned with onion and toasted almonds, make a tasty topping for broccoli. While cooking broccoli, remember that it requires quick cooking. Always cook just to the crisp -tender stage to retain the fresh flavor and aroma as well as the bright green color. Then enjoy the fresh, tasty flavor! Green and Gold Broccoli 1 bunch broccoli 1 cup plain croutons 3/4 cup grated, old cheddar cheese 1/4 cup chopped green onions 1.4 cup slivered, toasted almonds 1/4 cup butter, melted. Wash broccoli and break into flowerets. Split large stems for more even cook- ing. Cook broccoli un- covered in boiling water with a pinch of sugar. Cook about 7 to 8 minutes, until crisp -tender. Combine croutons, cheese, onions and almonds in a small bowl. To serve, drain broccoli thoroughly and place in serving dish. Pour melted butter over dry ingredients. Toss gently.
