Fresh beans are available all summer, say the food specialists at the Ontario Food Council, Ministry of Agriculture and Food. Beans are grown in the Hamilton -Wentworth, Essex and Oxford county areas. To choose fresh beans, look for crisp, young beans free from severe blemishes. To maintain best quality and nutritive value, store un- washed beans in a plastic bag in the refrigerator. Use within five days. Beans are easy to prepare and complement many summer meals whether served hot, off the barbecue or cold in a salad. Green and wax beans in a salad are particularly en- joyable during the summer months when cool foods are welcome. Before adding them to salads, cook beans for a short time until they are crisp tender (about eight minutes). To accompany your next summer meal, try this tasty Marinated Beans and Cauliflower salad.
