Picnics are a great part of
summer. Everyone can en-
joy the outdoors, good com-
pany and tasty food.
However, Food specialists.at
the Ontario Food Council,
Ministry of Agriculture and
Food, suggest a few food
safety hints to keep in mind
before your next outing.
Make sure you have the
proper equipment to keep all
protein foods well chilled.
These foods include all
meat, fish, poultry, eggs and
dairy products, cooked or
uncooked. Be especially
careful to keep all
mayonnaise -based dishes
and cream desserts well
chilled. Uncooked meats for
barbecuing at the picnic
must also be kept cold until
they are ready to be cooked.
If these foods are not cared
for properly, you run the
risk of food poisoning.
Cold foods should be kept
below 4°C (40°F). Before
packing them for a picnic,
make sure they are well
chilled. For example, if
cooked chicken is to be
carried to the picnic site,
cook it the night before.
Refrigerate it overnight so
that it is well chilled before
it is packed. The same would
apply to a dip for fresh
vegetables, chicken or egg
salads or a cream -filled
cake or pie. When it's time
to go, pack these foods in an
insulated container with
several frozen ice packs or
bags of ice cubes.
At the picnic site, don't
leave foods sitting out
longer than it takes to- eat
them. As soon as you have
finished eating, return lef-
tover food to the cooler.
Remember, with the right
combination of time, warm
temperatures and moisture,
food poisoning bacteria
could grow very quickly and
ruin the picnic for everyone.
Anything from stomach
cramps to serious illness
could be the result.
Be careful! Always keep
the protein foods cold and
enjoy safe picnics through
the picnic season.

Ministry grants rate
increase to social services

The Social Services
Committee reported to
Huron County council that
they had been advised by the
Ministry of Community and
Social Services that effective
May 1, 1978, the co -payment
portion of the Nursing Home
rate has increased to $8.50
per day from $8.30 per day
and that the daily Inter-
mediate Care rate has been
increased to $21.30 from
$19.60 retroactive to April,
1978.
The Homemaker rates
approved by County Council
in December 1977 have now
been approved by the
ministry effective January 1,
1978. They are $4.20 per hour
in town and $4.60 per hour
out of town; $33 per day in
town and $36.80 per day out

The Victorian Order of
Nurses rate approved by
County council in December
1977 has now been approved
by the ministry effective
January 1, 1978 at $12.25 per
visit.
The report to county
council stated that the social
services department
caseload for May remained
the same as for April at 100
cases. The number of
beneficiaries, however, has
decreased from 334 persons
to 270 persons. The total
expenditure, to May 31, 1978
was $166,283 which is $5,437
less than the pro -rated
budget for five months.

appointed to the Zone
Committee and the Program
Committee, it was learned
by council.
It was stated in the report
that the committee had
reviewed a draft agreement
between the Town and
Country Homemakers and
the County of Huron for the
purchase of Homemaker
service from this
organization. The Social
Services Committee gave
tentative approval to the
agreement and authorized
the Social Services
Administrator to forward the
draft copy to the Town and
County Homemakers for
their consideration.
