E. Ontario mushrooms are out of the dark Mushrooms are becoming a very popular vegetable with many Canadians. They are easy to prepare and take little time to cook, qualities most welcome in the kitchen, Because they are available fresh all year round, they are very appealing as a flavorful part of special as well as family meals. About 26 million pounds of mushrooms were produced in Ontario in 1976, making Ontario the largest single mushroom producer in Canada. Projected production for 1977 is 27.5 million pounds. Ontario is, now producing ap- proximately 60 percent of the total mushrooms grown in Canada. During 1978 mushroom production is expected to increase about 10 percent. Ontario's mushroom in- dustry is primarily located in the Golden Horseshoe area. The largest . con- centration of farms is in the regions of Peel, York, Halton, and Hamilton - Wentworth. Mushroom farms also are located near Leamington, Simcoe, Ottawa, and east of Toronto. Traditionally, farms have been located close to the large fresh markets due to the product's perishability. Currently more than 60 percent of present production goes to the fresh market. Mushrooms are sold fresh, canned, frozen, or freeze- dried. Fresh mushrooms are usually sold by the pound or. in pint-size covered con- tainers. Canned mushrooms are available whole, button, sliced, in pieces and stems, or creamed. You will find canned mushrooms most commonly packed in 10 - ounce sized cans.
