apples
Fresh, crisp Ontario
apples enjoyed during the
fall months are a pleasure to
eat during the winter and
spring months as well. Last
fall, apples were freshly
picked and rushed to cold
storage and controlled at-
mosphere (CA) units to be
stored for winter eating. Ap-
proximately 2 million
bushels of apples were put
into cold storage and over 1
million bushels into CA
storage last fall, report the
food specialists at the On-
tario Food Council, Ministry
of Agriculture and Food.
Both cold and CA storage
help maintain the quality,
crispness, and flavor of On-
tario fall apples so they can
be enjoyed almost year
round. After harvesting,
apples normally continue to
ripen. With these storage
methods, however, apples
can be held at their peak of
quality for a longer time
than usual.
Cold storage maintains a
low temperature and high
humidity which help slow
down the ripening or ageing
- process of the apples.
Apples from cold storage
are usually available from
harvest till January or early
February.
CA storage not only
regulates the storage
temperature but also con-
trols the atmosphere, that
is, the amount of oxygen and
carbon dioxide in the
storage room. This virtually
halts the ripening process
and holds the apples in a
state of ''suspended
animation", These apples
can be stored 1'onger than
cold storage apples and are
usually marketed after
supplies of cold storage
apples have been depleted,
around early February to
June or early July. Even
after many months, CA -
stored apples maintain
much of the crispness and
flavor they had at harvest
time.
If the apples have been
stored under CA conditions, '
this usually will be indicated
on the label of the package.
To preserve the high quali-
ty of theapples at home,
store them in a perforated
plastic bag in the
refrigerator, or in a cool,
well -ventilated area (0° . —
4°C) and plan to use them
within 10 days.
