It takes a large amount of food
to feed all the visitors each year
to the annual Bean Festival in
Zurich, and a great deal of work
in preparation.
Over one ton of white beans
are used, and these are first
cooked in large kettles built esp-
ecially for the purpose. After
cooking, the beans have all the
necessary ingredients added, and
then baked in the large ovens
especially built for the purpose.
A considerable amount of bacon,
ketchup and brown sugar are
used in the recipe, but the offic-
ial cooks will not divuldge all
the details.
The first cooking of the white
beans begins Thursday, and
requires almost steady attention
from then on. About 50 men and
women are involved in this type
of work at the festival.
Last year the crowd was estim-
ated at close to 10, 000 and no
one knows what might happen
this year, depending largely on
the weather,
As well as the main item on
the menu, beans, about a half
ton of ham is used in the serving
BEANIE PIZZA PIE
1/4 lb. Italian sausage sliced
1 3/4 cup pork and beans with
tomato sauce
dash oregano
1 tomato thinly sliced
6 -oz. sliced Mozzarella cheese
1 tbsp. grated Parmesan cheese
1 unbaked 9" pizza shell
In skillet, cook sausage; drain
and crumble. Combine sausage,
pork and beans, oregano. Place
pizza shell on baking sheet;
spread with bean mixture. Bake
at 400 deg. 10 minutes. Arrange
tomato and cheese slices over
beans. Sprinkle with Parmesan
cheese. Bake another 20 rein.
or till cheese is browned. 2 to 3
servings.
TEENAGERS LOVE THIS
3 1/2 cans pork and beans
1 med. onion minced
1/4 cup molasses
3 tbsp, pickle relish
I tbsp Worchestershire sauce
2 tsp. prepared mustard
1/4 tsp pepper
7 - oz. bot ginger ale or lemon
pop
2 - oz. can sliced mushrooms
Stir beans with all ingredients
except mushrooms. Pour into
casserole and bake at 325 deg.
11/2 hrs. Mix in mushrooms and
continue baking 1/2 hour. 6 to 9
servings
of the meals. There is also 25
crates of cabbage cut up into
cole slaw, and a large amount of
bread which is placed on every
plate.
Many volunteers
at bean festival
People - the people of Zurich
and surrounding area volunteer
their time and labour to make
the Bean Festival such an out-
standing success.
After the primary planning
has been completed by the over-
all committee in charge, the
call goes out for volunteers for
the scores of jobs that must he
done on festival day. Between
200 and 300 local residents
are actively involved in the
festival on the big day, Their
services are used for cooking
beans, making cole slaw, but-
tering bread, making coffee,
slicing meat, waiting on tables
and the dozens of other jobs
which must be looked after.
Some of the men look after
selling rickets, arranging tours
to tite bean fields, and supervise
the horseshoe tournament, as
only a few of the Many tasks.
Others have to supervise parking
and of course there are those wlio
assist the ladies in the cooking
.department.
Then there are the exhibitors
or those who set up stands on
the streets for the big day. All
these jobs require help --and
more help. But the people of
the community have been good
to rally to the cause and assist
wherever needed.
