HomeMy WebLinkAboutZurich Citizens News, 1973-08-23, Page 26PAGE 2 CITIZENS NEWS SOUVENIR EDITION Plenty of contestants over the years ;>. • * . 41. % .‘ t • •-f Recipes OLD FASHIONED BAKED I3EANS Large size Frypan Temp: 220 degrees Time: 6 hours 1 pound white beans 6 cups water 1 1/2 tsp dry mustard 1/4 tsp pepper' 1 tbsp salt " • 2 large ()along, peeled and sliced 1/2 cup brown sugar (or) 1/4 cup brown sugar and 1/4 cup molasses 2 tbsp sweet pickle juice or vin. 1/2 tsp each cinnamon and cloves 1/2 cup ketchup or chili sauce (optional) 1/4 pound salt pork or bacon, sliced Pick over beans, wash, add water Soak 8 hours or overnight. Place in frypan using liquid. Bring to boil at 300 deg, and boil un- covered while adding remaining ingredients, except pork. Stir until blended. Lay bacon or pork slices on top. Cover, sim- mer at about 220 deg, 6 to 8 hours, stirring occasionally. Add enough liquid while sim- mering to barely cover beans, as necessary. Test for tenderness. NOTE: - If beans are quick cook- ing, do not soak, Follow label instructions. Try 1/3 cup maple syrup and 1/4 cup brown sugar in above recipe for an unusual flavor. Serves 4 to 6. SOUTHLAND FAVORITE 1 cup dry kidney beans 2 tbsp butter 1 onion chopped 1 clove garlic minced 1/2 tsp celery seed 1/2 tsp sage 1/2 tsp ginger 1 tsp ketchup or chili sauce Salt and pepper to taste Croutons Chopped mint or parsley Soak beans overnight in water to cover. Drain and measure liquid to make 6 cups, adding water to cover if necessary. Gently fry onion and garlic in butter till golden. Add this and the next 4 ingredients to the beans and liquid in a soup pot. Simmer, covered, till beans are very tender: Add salt and pepper and mash beans well. Top each serving with croutons or diced bread that has been fried in butter. Sprinkle with bits of mint or parley. 4 servings. BEANS AND MEAT BALLS 2 cup dry beans 1/2 ib. bacon 1 tsp salt 1 tsp dry mustard 1 tsp ginger 1/2 cup honey 2 tbsp chopped onion Wash beans, cover and soak in water overnight. Cook slowly till tender. Drain, but reserve liquid. Place half of bacon in rectangular casserole. Add beans. Add remaining ingredients comb- ined with 1 1/2 cups of bean liq- uid. Make and press small meat balls (see recipe below) down into beans. Lay remaining bacon on top. Bake in 300 -degree oven 1 1/2 to 2 hours. 6 servings. MEAT BALLS 1/2 ib. ground lean beef 1/2 lb. ground smoked ham 3 tbsp. chili sauce 2 tbsp brown sugar 1 tsp salt 1 tbsp soy sauce 2 tbsp chopped onion 2 slices white bread 1/4 cup hot milk 1 beaten egg Pour hot milk over bread and mix thoroughly.
