BEANS AND MEAT BALLS
2 cup dry beans
1/2 1b. bacon
1 tsp salt
1 tsp dry mustard
1 tsp ginger
1/2 cup honey
2 tbsp chopped onion
Wash beans, cover and soak in
water overnight. Cook slowly
till tender. Drain, but reserve
liquid, Place half of bacon in
rectangular casserole, Add beans.
Add remaining ingredients comb-
ined with 1 1/2 cups of bean liq-
uid. Make and press small meat
balls (see recipe below) down
into beans. Lay remaining bacon
en top. Bake in 300 -degree
even 1 1/2 to 2 hours. 6 servings.

1/2 lb. ground lean beef
1/2 lb. ground smoked ham
3 tbsp. chili sauce
2 tbsp brown sugar
1 tsp salt
1 tbsp soy sauce
2 tbsp chopped onion
2 slices white bread
1/4 cup hot milk
ttp1 beaten egg
Pour hot milk over bread and
mix thoroughly, Add remaining
ingredients. Shape into small
balls.
SOUTHLAND FAVORITE
1 cup dry kidney beans
2 tbsp butter
1 onion chopped
1 clove garlic minced
1/2 tsp celery seed
1/2 tsp sage
1/2 tsp ginger
1 tsp ketchup or chili sauce
Salt and pepper to taste
Croutons
Chopped mint or parsley
' Soak beans overnight in water
to cover. Drain and measure
liquid to make 6 cups, adding
water to cover if necessary.
Gently fry onion and garlic in
butter till golden. Add this and
the next 4 ingredients to the
beans and liquid in a soup pot.
Simmer, covered, till beans are
very tender. Add salt and pepper
and mash beans well. Top each
serving with croutons or diced
bread that has been fried in
butter. Sprinkle with bits of
mint or parfley. 4 servings.
Huron County largest producer
There are six major counties
in Ontario that specialize in
growing beans -• Kent, Elgin,
Middlesex, Lambton, Perth and
Huron. These counties represent
over 4, 200 growers.
Of the six counties, Huron is
the largest bean producer, with
close to 1, 400 growers. A great
number of these growers are
located in the areas surrounding
Zurich - Hay, Stanley, Stephen,
Usborne and Tuckersmith town-
ships.
The total acreage of beans in
Ontario is about 90, 000 with
30, 000 acres grown right here
in good old Huron County. The
estimated amount of beans
grown in Ontario is 1, 500, 000
cwt.
About half of the total amount
of beans grown in Ontario must
be exported. Up until ten years
ago, there were just enough
beans grown in the country for
domestic use,. but in the past
ten years the growers have
doubled their acreage making
it necessary to export the balance
Beans are now considered as one
of the best cash crops there is
TOMATO BAKED BEANS
7 - 1/2 cups boiling water
2 - 12 cups dry white beans
1 med. onion sliced thin
1/3 cup butter
1 - 28 oz. can tomatoes and juice
I tsp. salt
1/8 tsp dry mustard
pinch of ginger
dash of cayenne
1/3 cup molasses
1/3 cup chili sauce
1. Add beans to boiling water.
Boil for 2 minutes. Cover
tightly, remove from hear and
let stand 1 hour.
2. Drain, reserving liquid and
turn beans into large saucepan.
3. Add all remaining ingredients
except molasses and chili
sauce. Bring to boil, reduce
heat and simmer for 1 hour.
Turn into 2 qt. baking dish.
4. Combine molasses and chili
sauce. Pour over beans.
5. Cover beans and bake at 325
deg. for 1 hour, Remove cover
and bake 1 hour longer or until
beans are tender,

There is an organization known
as the Ontario Bean Producer's
Marketing Board which has help-
ed a great deal with the export
market of beans in the country.
The growing of beans is usually
regarded as a 90 -day crop, since
they are planted in early June
and harvested in early Septemb-
er. Years ago the beans used to
be pulled and drawn into the
barns, where they would be left
for some time before they were
threshed. Now, however, most
farmers combine the beans right
in the field, thus eliminating
a great deal of hard work.
Bean straw is considered val-
uable by most farmers, and they
usually bale and draw it into
their barns, where it is later
used for bedding cattle, and
feed.
From the time beans are first
sown in early June, until they are
harvested, there is considerable
amount of work involved for the
farmer. Shortly after they are
up out of the ground they must
be scuffled so the ground around
them is loosened to aid in their
growth. A little later they must
be, hoed to clean the weeds
away from the plants, Sorne
farmers now use weed sprays to
eliminate the tedious job of
hoeing.
When the beans ripen in the
early fall the entire plant must
be pulled out of the ground.
This is now done with modern
machinery that will pull two or
four rows at one time. After
they are dried out the combines
are able to come along and
harvest the crop.
Beans require proper climatic
conditions to grow successfully,
and this area of Ontario is best
suited for this purpose. They
must have an abundant supply of
rain and warm sunshine to mat-
ure properly.
Once beans have been sold to
either the bean company or the
independent dealer, they are
then ready for use by c anning
factories in the manufacture of
pork and beans, or bean soup.
There are a number of other
methods of selling the finished
product as well. Most dealers
package thite beans for retail sale
in stores where housewives pur-
chase there for their own use.
Many women prefer making
their own pork and beans to those
bought in the grocery store.
Poorer quality beans are kept
by the farmers and used for
feeding cattle. The beans are
cooked in a big electric kettle
before they are used for feed.

RANCH BEANS FOR THE GANG
12 cups canned beans
2 med onions diced and sauteed
1/4 cup brown sugar
1/4 tsp salt
1/4 tsp pepper
3 dashes Tobasco
1 bottle ketchup
1 cup"of ale
Bake at 350 deg. for 1 hour. Bac-
on strips may be placed over the
top for extra flavor.
COUNTRY STYLE
1 1b. dry beans
2 tsp salt
1/2 tsp pepper
1 clove garlic chopped.
1 bay leaf
2 med onions chopped
1 green pepper chopped
3 peeled tomatoes chopped
1/2 tsp oregano (optional)
1/4 cup parsley chopped
6 strips bacon
Simmer beans in water to cover
with salt, pepper, garlic and
bay leaf till just tender. Fry
bacon strips till crisp, then
remove from pan. Saute onions
till golden in the drippings,
then add pepper and tomatoes
and cook 5 minutes more. Stir
in oregano and parsley. Drain
beans and mix thoroughly with
all other ingredients including
bacon which has been crumbled.
Place in pot or casserole, adding
bean liquid to cover. Bake in
350 deg. oven for 1 hour or
more, adding liquid if necessary.
