Chicken on the barbecue is
tender and exceptionally juicy,
but can be a challenge to inexp-
erienced chefs. To avoid a
charred scorched skin, chicken
requires more care over the
coals than any other meats.
Use chicken halves, quarters,
or pieces for grilling. Wait
until coals are covered with
greyish white ash, brush the
chicken with oil or melted but-
ter, and place skin side up on
a greased grill. For medium
heat, keep the grill 6 to 12
inches above the coals.
Turn the chicken often to
prevent scorching, and leave
the skin side down for only three
to five minutes at a time. Brush
lightly with butter or a marin-
ade after each turning. If the
marinade or basting sauce cont-
ains a lot of sugar, use only
oil or butter for basting during
cooking. Wait until the last
ten minutes to baste with the
sauce. This helps prevent
scorching.

This past week was set aside
as Senior Citizens' Week, but
the cold wet weather kept ,
everyone pretty well confined
indoors.
On Tuesday evening, the
children from Grand Bend Gosp-
el Hall paid their regular mon-
thly visit to the Home and
entertained our residents to an
evening of music.
Miss Grace Lewis, Craft Sup-
ervisor, Department of Social
and Family Services, visited
the Home this past week and
was pleased with our Craft Room
accomplishments. Thursday
evening was bingo night again,
and the fans enjoyed their
evening of fun.
The sympathy of the residents
and staff is extended to the
family of the late Miss Ida Cot -
tel who passed away in South
Huron Hospital.
The following poem might
be of interest to you. It was
written by a patient in a Psy-
chiatric Hospital and was taken
from the Patient's corner.
Today upon a bus I saw
A lovely maid with golden
hair,
I envied her she looked so fair
But when she rose I felt such
shame,
She used a crutch, for she was
lame.
O God, forgive me when I
whine,
1 have two legs, the world is
mine!
One day upon the street I met
A handsome boy I can't for-
get.
He watched other children
laugh and play
While he stood back out of
their way.
I said, "Why don't you join
the others, dear?"
But he never noticed; he
could not hear.
0 God, forgive me when I
whine,
I have two ears, the world is
mine!
Once in a shop to buy some
sweets,
I was served by a lad as one
seldom meets,

"All children are very welcome"
His charm was boundless; his
manner sincere,
He seemed to radiate warmth
and good cheer.
I said, "Thank you, dear,
such courtesy I seldom find."
And then I saw that he was
blind.
0 God, forgive me when I
whine.
I have two eyes, the world.
is mine!
Two legs to take me where
I'd go;
Two ears to hear what I
would know;
Two eyes to see the sunset's
glow:
This world is mine!
0 God, forgive me when I
whine!
The Sunday evening chapel
service was conducted by Rev.
Douglas Warren, of Crediton
