Young carrots
are delicious
Just pulled from the rich soils
of Ontario, the young carrot is
a sweet and tender vegetable
delicacy. Bunches of young car-
rots with their bright green feath-
ery tops left intact are certainly
more attractive than packaged
carrots. These tops must be rem-
oved before storing, however, as
they drain moisture from the
carrot causing it to wilt. Cut the
tops off a 1/2 inch above the
crown and discard. Then check
that the carrots are dry before
storing in a perforated plastic
bag in the vegetable crisper.
Carrots stored in the refrigerator
will stay fresh and crisp for at
least 10 days or longer.
When preparing young carrots,
no scraping is required. Just
rinse under cold water and gently
rub to remove the skins. Carrots
are at their best cooked simply
in boiling salted water, During
cooking, the flavor may be
further enhanced by the addition
of chopped mint leaves.
To serve carrots with a touch
of green, food specialists at
the Ontario Food Council, Ont-
ario Department of Agricullure
and Food suggest a sprig of parsle
inverted into the stem end to
simulate the natural feathery
carrot top.
