.The Huron County
Federation of Agriculture after a
reasonable amount of success
tackling the provincial
government over school taxes is
now spearheading a fight against
' federal authorities.
The Federation has expressed
concern over the amount of beef
being imported from Australia at
a time when rising costs for beef
producers have cut profit
margins for farmers.
The Huron Federation has
drafted a letter to Jean Pepin,
Minister of Trade and Commerce
asking for a halt on such
imports.
The letter is as follows:
Dear Sir:
"I am concerned about the
importation of beef from
Oceania. It is becoming
increasingly difficult to farm
profitably in Canada because of
rising input costs and high
Freezing Eggs
Saves Money
Eggs are such a good buy right
now you can't afford to over-
look them. Eggs can be frozen
at 0 degrees and stored for up
to four months. Frozen eggs can
be used in cakes, cookies, muf-
fins, meat loaf or sauces, sug-
gest food specialists at the Ont-
ario Food Council, Ontario
Department of Agriculture and
Food. They can even be scramb-
led or served as an omelet.
Eggs may be frozen whole or
separated. To prepare whole egg
for freezing, break them out of
the shell and mix the yolk and
white thoroughly with 1/2 tsp.
salt or 1/2 tsp. sugar for each
cup of eggs (about 6 eggs). The
sugar or salt is required to pre-
vent separation of egg yolks dur-
ing freezing. Salt is used for
eggs to be used in main course
dishes, and sugar for eggs to be
used in desserts. Egg yolks only
are mixed with 1/4 tsp salt or
1 tsp sugar for each 1/4 cup egg
yolks. The egg whites alone
require no mixing, salt or sugar
for freezing; just put them into
a container and freeze.

profitably in competition with
Australian beef producers.
Please advise me whether you
and your department intend to
stop or restrict these imports."
