Food poisoning bacteria thrive
on stuffing that is improperly
stored or prepared. To ensure
safe eating, the home econom-
ists of the Ontario Department
of Agriculture and Food, suggest
you follow these simple rules.
Stuffing should not be prep-
ared until the turkey is ready
for the oven. If some advance
preparation is necessary, mix
only the dry ingredients and add
moisteners just before stuffing
the bird. Leftover cooked stuf-
fing should be removed from the
turkey, and refrigerated, not
frozen. It will keep safely for
one or two days.
