Roast Only One -Half Turkey If Christmas Guest List Is Small Small families may prefer to roast only half a turkey for Christmas dinner this year and freeze the second half for use another time, suggests the food council, Ontario Department of Agriculture and Food. To roast half a bird, author- ities advise that you skewer the turkey skin to the meat on the bones, along the cut edges. Next, tie the drumsticks to the tail and then skewer the wing to the breast meat. Fill the neck and body cavities with stuffing, but not to excess. Cover the stuffing with 'alum- inum foil and invert the bird on a greased roasting rack, so the turkey is skin side up. Finally, place the rank and turkey in 'a shallow roasting pan and roast as for a whole turkey that weight. Leftover Turkey For storage, authorities agree that leftover turkey meat should be separated from the dressing as soon as possible. The meat and stuffing can then be placed in separate packages or con- tainers, and either refrigerated or frozen for use later on. One leftover turkey idea is broiled turkey sandwiches, Swiss -style, delicious enough for party fare, Spread slices of bread with mayonnaise, pile with sliced turkey, mound with cooked mushrooms, top with slices of cheese (Swiss -type), and broil until brown and bub- bly.
