Tips on Wise
Peach Selection
Freeze peaches now, advise
food specialists at Macdonald
Institute, Guelph, and enjoy
their fresh fruit flavor in the
cold months of winter. Here
are some tips to preserve the
flavor, color and texture of
fresh peaches.
Use only table -ripe peaches
at eating maturity. Remove
peach skins by dipping in boil-
ing water for about one minute,
and then in cold water. Slice
as for serving. Add sugar in
proportion of one to six (one
pound sugar to six pounds of
fruit). Dissolve.
To prevent discoloration, add
pure ascorbic acid in propor-
tion of one-quarter teaspoon to
one pound of fruit. Be sure to
use moisture -vapor -proof pack-
aging and place peaches in the
freezer at 0 degrees or lower.
Not all varieties freeze well.
Red Haven, Envoy, Sunbean
and. Beteran give satisfactory
results.
