Peaches Should be Preserved As
Soon as Purchased for Best Results
To preserve all good qualities
of Ontario -grown peaches, they
should be processed as soon as
purchased. Food experts at Mac-
donald Institute, Guelph sug-
gest that you freeze the peaches
for future good eating.
Here is a quick freezing
method. Choose the varieties-
Veteran, Envoy and Redhaven_
for most successful freezing.
Select the fruit carefully, so
that you have firm, ripe fruit.
Wash the fruit to remove soil
and sprays.
Dip the fruit into boiling
water for about one minute, to
loosen the skins. Dip into cold
water, then slip skins off with
the hand or paring knife, Re-
move pits from peaches,
Quickly place peach halves
into a weak brine (1 teaspoon
salt per quart of water) to pre -
discoloration of the fruit. A few
ice cubes keep the water cold.
Slice peaches now, for best
flavor when eaten, Mix sugar,
about 1 pound for every 5
pounds of fruit, with a small
amount of ascorbic acid. As-
corbic acid is available as a
powder at drug stores. One-
quarter teaspoon of ascorbic
acid to evey 4 cups of sugar is
sufficient to prevent the brown-
ing of the peaches. Add sugar
and ascorbic acid mixture to
sliced fruit and stir gently to
dissolve sugar in peach juice.
Quickly fill freezer contain-
ers or sealers with sugared
peach slices. Leave about tliree-
quarter inch space at the top of
containiers for the expansion of
freezing food, Freeze finished
packages immediately.

MUSICAL RIDE - Here is one of the 32
scarlet -coated riders of the famous RCMP
Musical Ride, headline attraction of the
all-star grandstand performance at Western
Fair, Landon, this year. The =unties will
perform every evening of the Fair, Sept-
ember 6 to 14, and the afternoons of Sept-
ember 7, 10, 13, and 14. The musical ride
is undoubtedly the greatest outdoor attrac-

Department Lists Various Dates For
Pheasant Hunting; Hay is Included
The Hon. A, Kelso Roberts,
Q.C., Minister of Lands and
Forests, announced open sea-
sons for pheasants throughout
Ontario, except Pelee Island.
The Pelee Island season will be
announced later in the year.
Few changes have been made
from the season in 1962.
In Essex County and Romney,
Tilbury, Raleigh and Harwich
Townships in Kent County, the
season will be October 26 to
November 2.
In Lincoln and Welland
Counties and the Townships of
Ancaster, Barton, Saltfleet,
Glanford and Binbrook in
Wentworth County, the season
also opens on October 26 but
extends to November 9.
Throughout the oeneral
southwestern Ontario pheasant
range including the remainder
of Kent and Wentworth Coun-
ties as well as all of the Coun-
ties of Lambton, Middlesex,
Elgin, Oxford, Norfolk, Perth,
Wellington, Waterloo, Brant,
Haldimand, Dufferin, Halton,

In Clarke and Darlington

the season will again be Oc-
tober 5 to October 26.
In the rest of Ontario (includ-
ing Bruce and Grey Counties
and the remainder of Huron,
Simcoe and Ontario Counties),
the season will be from Oc-
tober 5 to November 2.
In areas where the season
begins on October 5, the bag
will be 3 birds of any sex per
day.
In the rest of the province
where the season opens on Oc-
tober 16 or October 26, the bag
will be three per day not more
than one of which shall be a
hen.
The bag limit on Pelee Island
has not been set.
Prospects for the pheasant
season 'throughout the pheasant
range appear to be relatively
good. Ontario as well as neigh-
bouring states did not ex-
perience any large winter mor-
tality of pheasants despite
heavy snowfall in many phea-
sant production areas. The
early spring has led biologists
to be optimistic concerning this
year's production; which was
higher in 1962 after a decline
throughout much of the range
in 1960.
Landowners and hunters will
be pleased with the reduction
in the number and variety of
seasons throughout southern
Ontario. The seasons now are
similar throughout large blocks
of the pheasant range providing
for wider distribution of hun-
ters over much larger areas.

Mounties Musical Ride Wilt 'be One
Of attractions at Western Fair
Western Fair at London, Sep-
tember 6 to 14, promises an ex-
citing, fascinating eight days of
entertainment morning, noon
and night.
The fair also provides the
greatest livestock show in On-
tario, with a million dollars
worth of cattle, horses, sheep,
swine, goats and poultry on dis-
play, plus the largest farm
machinery show of any fair in
Canada.

colourful R.C.M.P. musical ride
and those popular young ladies
of song, the Chordettes, who
first gained musical fame with
the Arthur Godfrey Show. The
