Ontario Egplant
Now On Sale
If you don't know what egg.
plant looks like, chances are
that you've seen it at the fruit
market and didn't recognize it.
Eggplants are firm, heavy pear-
shaped vegetables with plossy
dark -purple skin. Usually an
eggplant is 3 to 6 inches in di-
ameter and will serve 5 to 6
people.
Eggplant is good served in
many ways — boiled, fried, or
baked. To prepare an eggplant,
wash it and remove the stem.
Don't cut it until you're ready
to cook it, because it discolours
rapidly. Another hint to help
it keep its colour: always use a

Here's how specialists with
the Horne Economics Service,
Ontario Department of Agricul.'
ture, suggest frying eggplant;
cut the pared eggplant into
crosswise slices % inch thick,
and then dip them in batter, or
egg and bread crumbs. Fry in
butter or cooking oil for 10 to
15 minutes until they are brown
on both sides. If you want to
deep-fry the eggplant, cook for
5 to 10 minutes in hot, deep fat
at 365 degrees.
Eggplant's bland flavour is es-
pecially good when combined
with other vegetables. Here's
a recipe for eggplant casserole
from the Home Economirs Ser
vice.
Slice one medium eggplant
(about 11 pounds) into slices
1 inch thick. Pare the skin
thinly and then cut into i/a inch
cubes. It should make about 5
cups. Melt 3 tablespoons of
butter in the frying pan and
saute the eggplant slowly for 5
minutes. Thinly slice 2 onionsi
and peel and slice 3 medium-
sized tomatoes, Place in but-
tered casserole with alternate
layers of onions, tomatoes and
1 cup of grated cheese. Sea-
son each layer with salt and
pepper. Top a mixture of 1 cup
of dried bread crumbs and 1/4
cup grated cheese. Dot with 2
tablespoons of butter. Bake at
375 degrees until the vegetables
are tender and the surface nic-
ely browned. It takes about 35
minutes.

Spare Fan Belt
Is Vital To 'Trip
A fan belt is a small, inexpes-'
ive appendage to the working
body of an automobile. try to
drive without it! This tough,.
sinewy little belt or rubber and
fobric is doing a giant job un-
der the ear's. hood. Generator,
fan and cooling system depend
on it. If it fails (and it can), a
vehicles's lights,. heat and pow-
er can fail with it. The Can-
adian Highway Safety Council
urges every motorist to carry a
spare fan belt, always.
From the Rubber Association
of Canada, the Council learns
that of an belt gets extra work
to din in summer driving. It's
muscles can be flexed so much
that it is strained, or slips a
lttle, or fails completely under
stress. The cost of replacement
is small if the failure occurs
near a garage. A spare belt
costs far less than a night ser-
vice call, a towing charge or a
missed appointment.
