SEIBA Ontario Egplant Now On Sale If you don't know what egg. plant looks like, chances are that you've seen it at the fruit market and didn't recognize it. Eggplants are firm, heavy pear- shaped vegetables with plossy dark -purple skin. Usually an eggplant is 3 to 6 inches in di- ameter and will serve 5 to 6 people. Eggplant is good served in many ways — boiled, fried, or baked. To prepare an eggplant, wash it and remove the stem. Don't cut it until you're ready to cook it, because it discolours rapidly. Slice one medium eggplant (about 11 pounds) into slices 1 inch thick. Pare the skin thinly and then cut into i/a inch cubes. It should make about 5 cups. Melt 3 tablespoons of butter in the frying pan and saute the eggplant slowly for 5 minutes. Thinly slice 2 onionsi and peel and slice 3 medium- sized tomatoes, Place in but- tered casserole with alternate layers of onions, tomatoes and 1 cup of grated cheese. Sea- son each layer with salt and pepper. Top a mixture of 1 cup of dried bread crumbs and 1/4 cup grated cheese. Dot with 2 tablespoons of butter. Bake at 375 degrees until the vegetables are tender and the surface nic- ely browned.
