Highlights Of
March Session

The new rates were negotiated,

Thursday, with the new Huron
County Employees Association,
formed since County Council a
year ago passed a by-law making
it legal for county employees to
be unionized. The Association was
formed, the road committee repor-
ted, at the suggestion of the coun-
ty road committee to discuss sick -
leave benefits and wage scales.
In keeping with the 10 -cent
raise for hourly -rated road work-
ers, foremen's salaries have been
inceased by $250.00 pe annum,
Reeve McCutcheon said. The scale
for foremen, he reported, now
runs from $337.50 to $450,00 per
month, depending on the type of
work and length of service.
Council approved the wage
boosts, and also approved the re-
commendations that rates paid to
hire trucks for road work should
be increased by 50 cents an hour.
County Engineer James W. Brit-
nell explained that the rates the
county had been paying are now
below those being paid by other
truck -hirers for similar work, and
that at the old rates the county
might not be able to get enough
trucks for its ;1960 construction
program.

Apple Crunch
3 cups pared and sliced apples
1 teaspoon flour
1/4 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
1 teaspoon lemon juice
1 cup crushed cornflakes
6 tablespoons butter
1/2 cup brown sugar
Mix sliced apples, flour, 1/4 cup
sugar, cinnamon, salt and lemon
juice and press into buttered shal-
low baking dish. Mix together
cornflakes and v cup brown sug-
ar, then put in the butter; this
mixture should be crumbly. Spread
this over the apple mixture and
bake about 45 minutes at 375 de-
grees until apples are tender and
the top is golden brown.
Butterscotch Tapioca Pudding
1 egg, separated
3 cups milk
1/4 cup quick cooking tapioca
3 cup brown sugar
1 tablespoon butter
3/4 teaspoon salt
1 teaspoon vanilla
Beat egg yolk in top of double
boiler, stir in the next 5 ingredi-

is no thought, he said, of using
the road foremen as constables to
chase speeders; their powers as
special constables are planned to
give them authority to check the
load weights of trucks using the

"As it is now," said Mr. Brit-
nell, "the truckers are watching
for the weigh scales and the
black -and -white cars. Now they'll
have to watch for the green trucks
as well. It's the deterrent effect
that we're after."
At the request of the road com-
mittee, County Council passed. a
By-law on Thursday, March 24, to
expropriate land in lot 25, con. 4,
McKillop township, which will be
needed for the approaches of the
new county bridge to be built over
the Maitland River, north of Sea -
forth.

add vanilla. Beat egg white until
stiff and fold into the pudding
lightly. Serve either chilled or
warm, just plain or with cream.
Pumpkin Cake
3/2 cup shortening
11/2 cups white sugar
2 eggs
2 cups all purpose flour
3 teaspoons baking powder
1i2 teaspoon cinnamon
?iz teaspoon nutmeg
1/2 teaspoon ginger
lir teaspoon salt
1 cup pumpkin
Three-quarter cup milk
1/2 teaspoon soda
1/2 cup chopped nuts (optional)
Cream, shortening and sugar.
Blend in well beaten eggs. Sift
flour, baking powder, salt and
spices. Mix pumpkin, milk and so-
da. Add sifted ingredients and li-
quid alternately. Bake in moderate
oven.
Farm Forum Cake
1 heaping cup chopped dates
1 teaspoon soda
1 teaspoon butter
1 cup boiling water (pour over
above 3 ingredients)
Then add:
1 cup white sugar
1 egg
% cup choped walnuts
pinch of salt
11 cups all purpose flour
Bake for 1 hour in and 8" by
8" pan at 350 degrees.
