Strictly Reliable -Ripe and Un-
ripe Differences -Features of the
Canadian Beekeepers, electing.
Woodstock despatch. -An announce-
ment of not only scientific interest
but of great commercial importance
was made by Prof. Shutt, chemist or
the Doniinion Experimental Farm at
Ottawa, at this morning's session of
the Canadian Beekeepers' Associa-
tion. During last season an investiga-
tion -had been made by Prof. Shutt
to ascertain the differences in com-
position between ripe and unripe
honey, It having been held that only
ripe honey sho.uld be put on the mar-
ket. Unripe honey is the extract in
its watery state, as deposited by the
bee in the comb. Ripe honey is gener-
ally admitted to be the product as
taxen from the comb after the cap
has been put on by the bee. It is held
by many dealers that what is corn -
=ply considered adulterated honey
Is really the unripe proeuet of the bee
taken from the cell before it has been
eapped, the object being to get extra
worth from the bees in refilling the
empty cells. It having been generally
consluered that the unripe honey con-
tains the larger amount of water,
samples of the capped and uncapped

The directorsreport allowed that
last season was highly satisfactory,
the honey being of excellent quality.
The results of the exhibition of On-
tario honey at the Pan-American,
which had been encouraged. by the
Ontario Government, were extremely
gratifying. Besides the gold medal
for general excellenee of quality,
thirty-three diplomas of merit were
awarded to Canadian beekeepers.
Treasurer Enright reported that
the total receipts for tbe year were
$757, and the expenditure $657.
Secretary W. Cause reported that
last spring the mimber of colonies in
Ontario was 2,300, according to the
reports sent in, and in the fall 8,1300,
an average increase of 66 per cent.
The average of comb honey taken
from each colony was five pounds,
and of extracted sixty-eight pounds.
Tile meeting of the association next
year will be held at Barrie.
