There is a gratifying demand for
Ontario wheat that is constantly
increasing with every year. The
millers of this Province have been
eminently successful in combining
Ontario and Manitoba wheat. And
the resulting fionrs—Blended flours
they are called—have given, and
aro giving, complete satisfaction
wherever used.
Blended flours have largely taken
the place of "western Bard wheat
flours" throughout the 1)Iaritime
Provinee. In Toronto, bakers are
using blended flours in preference
to any others, All this means a
rising market for Ontario wheat
because blended flours are milled
of Ontario wheat with at small
quantity of Manitoba wheat to add
the necessary "strength".
Blended flours make a bigger,
whiter loaf of bread than either
Manitoba or Ontario wheat flour
alone. And blended flours nntke
lighter, tastier pastry than even
Ontario "pastry" flour.
With the millers using every
effort to create a profitable market
for Ontario wheat, it does seem as
if the farriers themselves should
help in this work to the extent of
buying blended flours for their
own use. If every farrier in On.
tario would use:only blended flour,
it would not only drive Manitoba
wheat flours out of the Province,
but it would start up such a de
nand for Ontario wheat that it
would pay every farmer well to
raise it.
