A. Missionary Gives His Experience
of the Way It Is Done.
First, then, what is food l It is
that which repairs the waste of the
tissue's, builds the body up, and
furnishes it 'with heat and energy
to meet the demands upon it. Your
body is nearly three-quarters wa-
ter.: 70 per cent. the remainder is
protein, fats, a small quantity of
mineral matter, and less of , carbo-
hydrates.
Never mind those big words. All
.you need to know is what a pro -
tells or earbohydrate food is, what
it does, tad bow mush, in relation
the sort of work rk yon do, you
ought to have of it. Then you can
'jot down what you are putting into
4our body, eliminate absolutely use-
' less items, adjust the proportions of
the others, and so live to agood old
age in perfect health, and turning
tout firettmass work.
Now to explain those food terms.
Protein is the basis of all life. It
builds up by replacing waste. It
.ds not, .primarily, for the production
of heat and energy. That is the
work of the fats and carbohydrates.
White of egg is almost pure protein.
`The flesh of most animals is eom-
i<osed of protein food. So, too, are
hsh, fowl, milk, cheese, eggs, peas,
beans, etc.
Rice, on the other hand, is a pure
caabehyd.rate-the producer of en-
ergy and body power. The extra-
ordinary endurance which is shown
by Indian coolies, subsisting on a
handfi.il .i f'• ries, is thus easy to un-
derettoid. . ;a

Fats produce heat for the genera -
than otenera . Olive -oil is the pur-
est fat, ,with butter following.
A man: doing hard physical labor
requires a greater proportion of
carbohydrates and fat, therefore,
than a brain -worker, or anyone liv-
ing an idle or sedentary life.
Brain -workers require a, little
more protein, and the great point
with them should be to select foods
that are easily (ligestible.' The
brain cannot do full or good work
-while hard digestion is proceeding.
The most easily -digested foods are
soft. -cooked eggs, sweetbreads, and
boiled white fish. .
Experts say that the average
irausinese lean, not taking much ex-
ercise; requires daily 3 ozs, of pro-
tein, r ozs of fat, and 32 ozo. of
carbohydrates, which in weight, as
aerved at tabic, would be about 4
lbs. :such more is, as a rule,
eaten, but the excess is either burnt
rip, rejected, or turned into fatty
depileit. It does no good, The

This was naturally a confusing
thing to happen.; but I was bound d
to respond to such an eloquent ap-
peal, and when the applause died
away, I rose, and answered with
considerable effort : •
"Your affectionate regard for my
welfare is so overwhelming that I
have no words in. which to. express
my 'appreciation," and sat down,
quite faint from the exertion. But
the novelty of the situation over-
came my fatigue, and turning to
one of the elders, I asked if .they
had any particular person in mind
as one who would be willing to be-
come my helpmeet, and he equal to
all the responsibilities they isad out-
lined. Immediately Miss W.''s name
was mentioned. "But," said I, "I
don't believe she would have me."
This seemed to me like matchmak-
ing with a vengeance. What a high-
handed act, to be sure 1 To order
their pastor to marry, and -then to
choose the girl besides! But the
worst was still to come. "We have
already seen her and told her she
must have you," said Brother Ra-
jappan.

So it was settled. I may
add
my wife and I have reason to ap-
prove highly of the Indian method
of matchmaking; but it should be
combined with the `Western method
of courting, as in our case, to se-
cure the best results.
A GRANMEDICINE

one very important function of the
missionary is to play the ,part of
matchmaker to his flock. But few,
if ,any, have heard of the conditions
being reversed, and the flock turn-

sugar, which they placed at my feet
like suppliants who desire to gain
the hearing of a petition. After all
