POISONING FROM CANNED
GOODS
By Dr. W. 3. Scholes
Serious poisoning from eating cann-
ed foods is comparatively rare. Yet
a few such cases occur each year, It
is now known that poisoning caused
frotn eating canned foods is com'ilon-
ly due to infection. ,The milder forms
of food poisoning cause vomiting,
diarrhea, cramps, and usually some fe-
verishness. The more, serious kind is
the type of poisoning known as botul-
ism.
Botulism is due to the toxin (poi-
son) of a germ, the botulinus bacill-
us. This germ or its spores enter
canned food through lack of cleanli-
ness at the time of canning. The
`spores are very resistant to heat.
When botulinus poisoning occurs,
there is prostration, dizziness, nausea,
difficulty in swallowing, and dimness
of vision, The ,;,toxin apparently at-
tacks the nervous system.
Carefulness in canning and preserv-
ing is the first safeguard against pois:.
oning. This includes careful selection
and cleaning of the food to be preserv-
ed, and cleanliness in handling.
