Christmas Dinner
'The night before Christmas
Aed all through the house
'Riot a creature was stirring
Not even -a mouse.
And mother 'should be; sleeping the
sleep of the just, resting easily in the
consciousness that all .is ready for the
:.annual dinner., Christmas dinner
tends itself to previous preparation,
r better than any other dinner, and
'.here should be practically nothing
to do on the day itself. -No' reason
for mother to be too tired to enjoy
the festivities.
Christmas Dinner is much the -same
in every. home, varying only in incl-
dentals. It is rather a good plan to
'make your menu the same (practical
ly) from year to year, if there .are
children in the home, as children love
repetition. It doesnot make much
difference to a grown-up, if the cen-
tre ;piece is a small Christmas Tree,.
or flowers, or a bowl of Fruits with
Holly buta child likes to look back
.and say, "we always had Fruit and
,Molly iii the, centre of our tablet" if
you serve cider as the beverage, or
drape your turkey with sausage, do
it each year, and make it a definite
part of your Christinas Dinner.
• Create your own traditions, and live
asp to ;them. Give distinct memories
to your children, for one never knows
what happy memories can meati; un-
til memories are all that one has left.
Marketing can be done days in ad-
vance for everything that comprises
the dinner; Plum Pudding should be
at least.2 weeks old, and Mince is
-one of the few pies that can be kept
to .advantage and as they are re -heat-
ed' they may be madd several days
,ahead, if kept in 'a cool place. The
fowl can be dressed and stuffed the
•.clay before, and trussed ready for the
oven. As a mile vegetables should
mot be prepared long before using,.
but now is the time to break that

Cranberry Sauce can be made a week'

table. Fruit can be prepared for the

-tate, with a minimum of worts. '

erent dressings. Most people prefer
a dressing which is not soggy. This
is made by using stale crumbs which
mist be cntrnbled very, very 'fine,
and then rub in the butter as carefully
.as you do for pastry. That careful
rubbing" in of the butter is what mak-
es the difference between good and
indifferent dressing. Do not use too
much Sage or Thyme and scrape the
•onion sit fine that you will' get only
the onion flavor and itot pieces of
c rtion in the dressing. •
Salad
A tart salad after the meat course
"seems to cut the heaviness and make
one ready for the dessert. The citrus
fruits are a good Choice for a salad
of 'this type, and a Grape -;fruit salad.

ough to off -set the rest of the meal.
Prepare your grape -fruit the day be,
lore by dividing it in sections. If
you prefer it slightly sweetened add'
a small amount ,of sugar anuli Tet it
stand in a, cool place until ready to
use. Drain and place a few sections
on lettuce and add a dresing made
of equal parts of salad dressing and
whipped cream.
Cranberry Jelly
1 ib. cranberries
. cup water
2 cups sugar
teaspoon salt
Wash the cranbe
gently in the water until the berries

strainer. Add the sugar and salt, and;.
cook for 5 minutes stirring constant-
ly. Pour ' into moulds, which have
been rinsed with cold water.
Salted Almonds
Cover almonds with boiling water
and let standuntil the skin is loos-
ened. • Drain and when cooled suf-
ficiently reinove brown skins. Melt
butter in a pan, a teaspoon is enough
for a Pie plate which is a good pan
tobrown the almonds irk. Stir the
almonds gently in the melted butter
until coated and brown gently in a
moderate oven. After the almonds
conne: out of the oven, shake salt ov-
er them, shaking the pan so that all
the nuts are coated, When cool store
in a tin boar.
Caramel ,Sauce •
3 heaping tablespoons brown sugar,
1 level tablespoon ; flour, a piece of
butter the size of, an egg. Mix and
brown over a slow heat, being care-
ful not to burn as that would make
the sauce bitter, 'Whoa it is a rich
brown add 1 cup of boiling water,, and
stir until dissolved, Re-Jieat before
serving. 'This is d very old recipe
and is good with any kind of ;steam-
ed pudding or with Cottage pudding,
Orange Cocktail
Pare a thin layer of yellow orange
rind, being careful to get none of
the bitter white skin. Chop this fine.
and. take :2 tablespoons of it. Add
this 1cup sugar 1
to s get and eup water
and simmer gently until the orange
rind is soft, Cool this liquid. Re-
move the white skin and divide' the
orange into sections. `.these
sections and put in sherbet glasses
and cover with 2 tablespoons of the
chilled orange liquid. Serve very
told.
Nut Bars
cup butter
cup sugar
2 beaten egg yolks
1 cup flour.
1 and % cups almondsblanclned
and chopped
Cream butter and sugar, ��add beat-
en
en eggs then sifted flour and al-
monds. lvfix and shape into rolls a
inehes long and as thick as your fin,
ger. Bake 12 to 15 minutes in a,
moderate oven.
