Hints For Homebodies Written for The Advance -Times By Jessie Allen Brown Recently a lady remarked that she. was on a diet and could not cat po- tatoes, meat, cake or pastry. A gen- tleman asked her what in the world there was left for her to eat. That same nzan should have beetron a very -similar diet for high blood pressure. The lady in question certainly did not look starved and shortly after- wards I watched her choose her din- •ner and this is what she had. Broiled -whitefish with lemon, whole wheat bread and .butter, asparagus tips,, let- tuce, tomato, and cucumber salad, and: cantaloupe for dessert. I call: that a mighty good meal. There were a good many other combinations she night. have chosen and still stayed within her diet. The American Diet. Potatoes,meat, white bread and su- gar are called the American diet.' That covers Canada as well as the United States. Just think of the number of people that you know who live large- ly on meat, potatoes and white bread and use quantities of sugar. They are all good foods but they need the addition of a great many other foods to balance them. It is a starvation diet forthe nerves and the body tis- sues. If that diet alone was persisted in, it would create a condition very sim- ,ilar to scurvy..,A great many people take sufficient fresh foods to prevent ,actual sickness but not enough to Make them really well. So much list- lessness and lack of pep in this world ,are, date to, an improper choice of food. Adults who are not gettiing along in the world and who are not accom- ,plishing what they feel they should, ought to study their "diets.. If the ',children are a bit slow at school, are you sure it is their fault? Did you ever think that they nigh not be eat- ing properly. Everyone should have 'plenty of fruits, vegetables (especially the leafy ones) meat, milk and eggs.. Cook With Your Imagination. Do you cook the same things over and over or in an emergency can you ttse your imagination? Many of the 'best recipes are the result of eraser. gcncies or accident. One of my most popular sandiwehes was made from 'desperation. One afternoon there was an unexpected invitation to go swimming and take our supper. When 1 went to ittake sandwidltes there was not a single thing to put in them and it was Wednesday afternoon and the stores were closed. Finally I saw some onions in the garden and as a last resort I tried those and they were such a success that I was de- tailed for onion sandwieftes for the rest of our picnics. These; particular ones were made with Oukiki Sets but the : milder onions such as Spanish, Bermuda or Egyptian are even better. Onion Sandwiches, Slice onions very thin and separate into rings, Put the rings on buttered bread and have them overlap but do not cover the bread completely with onion, Sprinkle with salt and pepper and cover with another slice of but- tered bread, By slicing them thin and separating them into rings you, do not get too much onion but just enough to flavor nicely, Another good every -day recipe is an egg sandwich. Egg' Sandwich, Hard-boilec he necessary u arnumber ofb t n o eggs but remove one when it has cooked 5 minutes, Cool and chop, Season well with salt, pepper and a little scraped onion.You will find that the 5 minutewill' 'u - ht � eggbe s £ ficiently moist to bind the rest and no other moistening such as salad dressing will be required. Sugar As a Vegetable Seasoning. Those fortunate people who have. gardens and can have vegetables which are really fresh seldom need to season their vegetables with sugar, After vegetables have been .picked they lose their sweetness, some rather slowly and others quite rapidly. Corn is one of the worst offenders, In 48 hours corn has lost 5Q% of its sweet- ness, . A tablespoon or two of sugar in the water in which corn is boiled will improve almost any corn. I have Used as much as a cup of sugar to try to make ;corn bought at a store have some remot,. resemblance to corn that is freshly picked, Canned corn sold under the trade name'`Ool- den Bantam" is usuallysweet enottgli but a little sugar improves the other varieties, especially the cheaper brands, Peas are another vegetable which should be used shortly after picking. { If they have stoody a little sugar in the water in which the peas are boiled will improve them considerably, Can- ned peas need a little sugar, When you season your beets add sugar. Beets take rather more pep- per than most other vegetables. Tur- nips, squash and spinach respond to. the sugar treatment. It is just the: little tricks of the trade like this that make ordinary foods fit for an epi- cure.
