Some women have found` that jel
lies made from commercial pectin are
hard and leathery.. This may -be caus
ed from one of two things. There
may have been an inaccuracy in
counting the cups of•fruit juice or
sugar. You know it - is a very easy
thing to unwittingly make a mistake.
Someone starts to talk, or the tele-
phone or door -bell. rings, or any one
of the countless interruptions, that
every woman has. You may be per-
fectly sure that you have counted cor-
rectly, and yet, even at that, you may
, have made a mistake, An '.extra cup
of .sugar will make a hard jelly.
The length of time of boiling must
be -made accurate. If you do not time
it by the clock, exactly as the recipe
says, your jelly will not be perfect.
If it is boiled' too long, the jelly will
be hard. If it is not boiled long en-
ough your jelly will be soft. Boil it
exactly the required time and your
jelly will be :perfect.
Housekeepers who have made jelly
by the old method sometimes think
that they are using too much sugar
when they use the commercial pec-
tin. .More sugar is required because
there is no: loss of fruit juiceby ev-
aporation from long boiling.
