Rhubarb, Pie -
Rhubarb is such a "favorite for pie,
thatitis sometimes caIIed'pie.plant'.
There are several ways of making
rhubarb pie, any on which are good.
It is a matter of personal choice. The
first one is my favorite, because, it
is more rhubarby. But many people
prefer the one made with a meringue.
Try all three ways, and have a family
vote for the favorite. Here is the'
first method.
Line a pie plate with' pastry. Mix
a teaspoon of sago or quick tapioca
into a cup of sugar. Put a little less
than half of this mixture in the bot-
tom of the pie, being careful , to have
some around the outer edge. Fill the
pie with rhubarb cut in small pieces.
Then add the rest of the sugar and
sago mixture, Wet the outer edge
of the - pie slightly. Cover the 'pie
with pastry.; Press?sboth layers to=
gether well, at the ge ;,,Bake in•, a,
