Mit sugar and cinnamon, : add but-
ter, melted, then beaten egg. • Sift
flour and baking powder and add al-
ternately ,with milk. Bake in sheet
pan in moderate oven. Sprinkle with
a mixture of sugar arid cinnamon be-
fore baking.
Baking Powder Raisin Bread
Mix and sift 31/, cups flour, 1 tea-
spoon salt, 'r'r teaspoon cinnamon, 4
teaspoons baking powder, Beat two
eggs until light. Add 1 cup mill: and
4 tablespoons. sugar. Combine with
dry ingredients. Add. 1% cups wash-
ed and dried raisins. Turn into a
greased loaf pan, let stand for 15 min-
utes. Bake at a moderate temperature,
or at about 350 degrees, for about 45
minutes, '
Shortbread
1 cup butter
2 cups bread flour
'i tspn. salt
Blanched almonds
'/ cup confectioner's sugar
1/ tspn. baking powder
1,tspn. vanilla
,Cream butter and add sugar grad-
ually. Mix and sift flour, salt and bak-
ing powder and add to first mixture.
Mix thoroughly and shape into two
rolls about the size of a silver dollar.
Chill for two or three hours. Cut in
slices about ?4 inch thick and put half
of an almond on each slice. Bake in
a slow oven for 20 to 25 minutes, or
until a pale straw color.

ble and press edges.together lightly.
Place in greased pan,.brush tops with
melted butter. Cover and let rise in'
warm place 20 minutes' and choose
a warns place without draughts. Bake
in hot oven (425 degrees) for 10 min-
utes. Again brush tops' witli, melted
butter and finish baking. Remove
from oven. Brush tops again with
melted butter, This quantity makes,
16 delicious rolls.
Date and Orange Bread
1 cup stoned and chopped dates
?3 cup candied'orange peel
1/4 cusp candied lemon peel
1 egg
1 cup white"flour
1% cups graham flour
1 tspn. salt
3 tbspns. Metter
% cup sugar
5 tspns. baking powder
1 cup milk
Beat egg until light with sugar and
butter which has been softened but
not melted. Mix and sift flour, salt
and baking powder and add to first
mixture: Add milk and niix well. Auld
graham flour to dates and candied
peels which have been finely chopped.
Combine with first mixture. Mix well
and turn into an' oiled and floured
bread pan. Let stand 20 minutes and
bake one hour in a moderate (350 de-
grees F.) oven.
Pecan Bread
31 cups flour
1 tspn. salt
Legg
tspns. baking powder
1 tbspns melted butter
I cup light brown sugar:
1% cups broken pecans
Mix ingredients and pour into loaf
pan, well -greased. Let rise for 10
minutes. Bake for one hour in slow
oven. Cool and store' in bread' box.
This quantity makes one large loaf
or two small loaves.

HINTS FOR SUCCESSFUL
BREAD -MAKING
Always sift the flour before meas-
uring and measure accurately.
ICeep flour in a warm place for
some time before using,; so that it
won't chill the dough.
Scald milk and cool before using.
Never add. water which is warmer
than tepid to yeast.
Never try to hurry or force raising
of dough, and on the'other hand do
not' allow it to stand too long' be-
tween kneadings.
To make an attractive, lustrous
crust, brush over the surface of the
loaf with melted butter just before
pitting in the oven, or just after re-
moving the baked loaf.
Do not add more flour than absol-
utely necessary during `kneading:
Keep dough soft.
Do not cover bread after baking.
Allow' to cool slowly, exposed to air.
Kneading of the dough is an essen-
tial part of the Bread -making process.

Potato Tea Cakes
1 cup cold riced potato
4 cups flour
1/ cup shortening
1 tbspn. salt
1 cup milk
Mix potato, flour and salt. Rub in
the shortening. Add milk. Put on
floured board and roll to one-half
inch in thickness. Cut in' small
rounds. Bake in a hot oven. Place,
'the cakes on a floured, but not greas-
ed, baking sheet.
Quick Bread Rolls
2 cups sifted cake flour
2 tspns. baking powder
% cup milk

BREAD RECIPES
Plain Bread
Bread should be'allowed to rise iri
a waren room between 10 and 90 de-
grees. .Avoid chilling. ,If bread is al-
lowed to stand overnight, use only-
natter
nlycarter as much yeast as recipe calls
fir. Put bread into a hot oven at first
a kill yeast plants. Lower heat af-
er first fifteen minutes. Rolls and
buns should be cocked in a hot oven.
Cook medium-sized loaves 1 hour.
Bread is baked when it gives a hollow
sound when tapped an the 'bottom

2 tbspns. shortening
1. : cup raisins
1 tspn. baking soda
About 3 cup sour milk or enough
to make soft dough
Cheese Straws
1 cup flour
1 saltspoon salt
13 cups nippy, grated cheese
1116 tspii, cayenne pepper
Ice water
8 tbspns. shortening
Sift together the flour, salt and
ayennc pepper and then cut in the
bortening. Add the cheese next and
steer enough ice water to form si
ougb. Roll out thin, cut ill lengths

yeast, told re-, width. Bake in a hot over about scv-
