THE MIXING HOWE

Hello, Homemakers I The chill
winds of autumn inspire a revival of
the heart-warming ar ming concoctions we
call soup, Especially welcome are
those varieties nourishing enough to
raise the standard of our daily food
necessities which keep us fit --meat,
vegetables and milk,
Hearty soups include chowders,
cream soups, and thick vegetable
<•nnps Some of these soups,. espeeial-
ly r iiorvder•s, are meals in themselves, ,
with only a light entree or salad and
'r dessert needed for balance, 1
The ars of soup -marring as port-
; ared in the old .cook books takes
time many ingredients and much i.
patience. But in these days when 1
minutes are precious, short1cuts are '
allowed, For example, canned con-
somme or beef extracts may double
for homemade stock, But when you
buy a booed roast be sure to ask for
the bones. To the bones, add some '
chopped onions, a few celery leaves
and a sliced carrot. Cover these '
ingredients with plenty of water,'
then bring to a boil and sinner for
two hours. Add salt, pepper and some
herbs, Strain this brother and us it ,
as a basis for special soups,
