On Monday, Nov. 16th the Fire-
side farm forum met at the home
of Mr. and Mrs. Robt. Jamieson
with 32 adults present, The topic
"The Challenge of Dairy Substitutes"
was very timely and interesting,
Four discussion groups were formed.
1. If dairying were seriously injured
by the widespread use of imitation
dairy products in 'our locality, farm-
ers would !veep very few dairy cat-
tle and there would soon be a large
surplus of beef cattle and pigs. In
other localities where dairying is the
ehief industry, the farmers would
have to change their way of life,
grow more soy -beans, increase poul-
try, fruit, vegetables, beefcattle and
bogs until soon Canada would have
a huge surplus, less milk and cream
would be used, people would have
poorer health as we think there is no
substitute for whole milk that has
the same food value. For a time the
economic system of Canada would
be endangered, many would be out
of work, until proper adjustments
THE SEAFORTH NEWS
were made, Much of the money for
substitutes would go to U.S.A. and
other warmer countries that produce
the edible oils in greater quantities.
So Canadians would have a much
lower income and be forced to lower
their standard of living, .(b) The ur-
ban consumer would also be affect-
ed. For a short time his cast of food
would be lowered until the farmers
made the adjustments but eventually
they would. suffer. If the Canadian
farmer has prosperous times, he is a
strong buyer of 'manufactured goods
and implements. When his income
deereases he must buy less, the fact-
ories soon mast curtail production
and unemployment for the urban
population would result.
To help meet the challenge of
dairy substitutes the farmer can do
much to help,
Use more of their own products.
Cheese is one food the Canadians do
not use as much per capita as most
countries.
Be willing to give money for ad-
vertising.'

COUNTY FINANCES CLOSE
YEAR IN GOOD SHAPE
According to Treasurer A. II. Er-
skine in his report to council on
Tuesday, 1053 has been an excep-
tionally good year,
"We have strengthened aur cur-
rent financial position regardless of
steadily and unestimated rising
costs, particularly in hospitals, reg-
istry office and jail," he said.
Figures show the county will end
the year with approxin1ately,$95,000
despite the fact $10,000 granted to
the tornado fund was not included
in the estimates.
In comparing the close of 1953
with that of the end of 1052, figures
showed at the end of 1932 a bank
balance of $114,000. But Huron
owed the County Home Building
Fund $50,000, leaving a net of
$04,000.
The approximate present balance
is derived after paying the levy for
county home building for 1953 and
allowing $20,000 levied for Wingham
General Hospital .
