Steamed Finnan !laddie
Place one pound of finnan
haddie on a square of aluminum.
loll or in a colander. Bring up

gether. leaving no openings, and
place foil -wrapped fish or fish
in colander, over boiling water.
Cover and let fish stream about
15 minutes until tender but still
(laky. Sprinkle with pepper and
serve tcith lemon butter sauce.
Serves 3 to 4. If whole finnan
haddie is used, remove bones
and skin after steaming.
