their twentieth wedding anniversary

Mrs, Henry Whitham has returned
to her home at North Bay atter nurs-
ing her mother, Mrs, henry Hoffman,
who is somewhat improved.
Mrs. R. E. Coates returned on Sat-
urday after spending a mouth with
Mr. G. F. Coates in Pickering, and
two months with Mr. W. H. Coates In
Montreal,
Mrs. Bolton, wife of Mr, Harry
13olton of the local hydro staff, was
taken to Victoria Hospital, London,
this week for treatment. Hercondi-
thin is improving slowly.

Cocoanut Layer Cake
We housewives feel more like

Chocolate Peppermint Cake
COCOANUT LAYER CAKE
2 cups sifted cake flour
2 teaspoons double-acting baking
powder.
1,f teaspoon salt
2.3 cup butter or other shortening
1 cup sugar
3 egg yolks, well beaten
1-8 cup milk
1 teaspoon vanilla
3 egg whites, stiffly beaten
11/ cups moist, sweetened cocoanut
Sift flour once, measure, add bait-
ing powder and salt, and sift to-
gether three times. Creast butter
thoroughly, add sugar gradually, and
creast together until light and fluffy.
Add egg yolks and beat well. Add
flour alternately with milk, a small
amount at a time, beating after each
addition until smooth. Add vanilla;

(
greased 9 -inch layer pans in moderate
oven (375 degrees P.) 25 to 30 min.

outside of cake with cocoanut while
frosting is still soft. Double recipe
to make three 10 -inch layers.
SEVEN MINUTE FROSTING
2 cups egg whites, unbeaten
cups sugar.
5 tablespoons water
11,r teaspoons Light corn syrup
•1 teaspoon vanilla
Combine egg whites, sugar, water
and corn syrup in top of a double
boiler, beating with rotary - beater
until thoroughly mixed. Place over
rapidly boiling water, beat constantly
with rotary egg beater, and cook 7
minutes, or until frosting- will stand
in peaks. Remove from boiling
water; add vanilla and beat until
thick enough to spread. Makes enough
frosting to cover tops and sides of
two 9 -inch layers.
CHOCOLATE PEPPERMINT
CAKE
2 cups sifted calve flour
1 teaspoon soda
?t, teaspoon salt
1.3 cup butter or other Shortening
114 cups sugar
1 egg, unbeaten
3 squares unsweetened
melted
Ve cup thick sour cream
Wt. cup sweet milk
1 teaspoon vanilla
Sift flour once, measure, adel soda
and salt, and sift three times. Cream
btitter thoroughly, add sugar grad-
ually, and cream well. Beat in egg,
then chocolate. Acid about V, of flour
and beat well; then sour cream. Adel
remaining flour, alternately with
milk, in small amounts, beating after
each addition. Add vanilla. Bake in
three greased 4 -inch layer pans- in
moderate oven 050 degrees F.1 311
n111utes. Spread with Peppeinri11
Frosting. When cold but soft, sprinkle
border of chocolate flakes around top.
For flakes, scrape 'Unsweetened
Chocolate with sharp knife. scraping
down.
PEPPERMINT FROSTING
2 egg whites, unbeaten
1;i, cops sugar
5 tablespoons water
1% teaspoons light corn syrup
1 teaspoon vanilla
('ombhn' egg whiles. sugar, water
and corn syrup in top of double
boiler, beating with wintry egg beater
until thoroughly mixed. Placer over
rapidly boiling water, beat, constantly
with rotary egg Beater, and cook 7
urinates, or nutil frosting will stand
in peaks. Remove from bailing water;
add vanilla and beat until thick
enough to spread. Color a delicate
shell -pink by adding 0 very small
amount of red coloring, and flavor to
taste with oil of peppermint (only a
few drops are necessary).

CELEBRATES 88th BIRTHDAY
Mrs. Hugh Grieve observed her 85th
birthday on Sunday at the home of
Mrs. W. M. Stewart, Goderich street,
with whom she resides. Formerly Car-
oline Leslie, she was born in Toronto
township. The family moved to Walk-
erton and later to McKIllop where she
was married in 1874 by Rev, Mr. Barr
to Hugh Grieve. They fanned 2h
miles north of Seaforth until his
death 27 years ago. Mrs. Grieve later
lived in Egmondvillo and Seaforth.
Site has two sons, James Leslie, of
Hanna, North Dakota, Joseph, Grosse
Isle, and one daughter, Mrs. J. Reinke,
Hamilton. There are five grandchild•
ren and three great grandchildren,
also two sisters. Mrs, Grant, Brantford
and Mies B. McGregor, Waseada,
Manitoba.
