STEPS IN CANNING
VEGETABLES
1. In buying war -grade rubber
rings, buy according to type of jar;
red label on the box. If pre-war rub-
ber rings spring back after being fold-
ed double, they may be used. Before
using, pour boiling water over rings
and zinc tops and let stand about one
minute.
2. Pint jars are preferable for
vegetables. Jar and glass tops must
be free front nicks and cracks. Match
the lids—do not let lids "rock" on
jars.
3. Sterilizing equipment is impor-
tant. Thoroughly scrub every utensil
and bowl to be used with a good brush
in hot, soapy water. Then rinse and
sterilize. For water sterilization, half
fill each jar with clear water, place
glass tops in position and stand jars
in boiler or large kettle. Addspoons,
knife, bowls and funnel Bring water
to boiling and let boil 16 niinutes. Take
jars out when ready to fill, one at a
time,

corn or string beans. These vegetal*

non acid. We can now recommend the
following procedure to'. add acidity.
Wash string beans, string top and
tail, wash and cut in uniform sizes.
Put into kettle cover with water and
boil 3 minutes, Pack to within 1 inch
of top, fill jar half full of canned
tomato juice or, hot cooked, strain-
ed tomatoes, then fill to top with
liquid used in precooking. Prooess in
water bath for 1.1-2 hours. Remove,
test and cool. -

Are Coming Due
Here are the dates on which ration
coupons are due:
Butter coupons 16 and 17 are now
valid: Nos. 18 and 19 are due July.
8. Nos. 16 to 19 expire July 31:
Sugar, tea and coffee coupons 1 to
10 are valid. They are good until de-
clared invalid by the Ration Adiminis-'
tration.
Meat coupons marked 4, 5 and 6 are
valid; coupons marked 7 are dire July
8. They expire July 31.

Canning sugar coupons 'tor June

valid until Sept. 30th, states E. 3.

and September canning sugar cou-
pons are valid on the first clays of
those particular months, and as they
come due, are valid until September
30th: They cannot be used before their
due dates.
Canning sugar may be used only
for fruit canning, ;jam or jelly making
until Nov. 30th. It cannot be used for
general household use. Any canning
sugar not used by the end of Novem-
ber must be declared to the Local Ra-
tion Board by December 15th, accom-
panied by sugar coupons from Ration
Book Number Three to the amount of
sugar householders are declaring, This
sugar may then be used for Household
purposes, says Mr, Farley, ,

that sugar for canning cannot be
turned over to friends or relatives
for canning or any otter purposes.ores. It

Tooth Paste Tubes
Playing Vital Role
The vital role discarded toothpaste
tubes and shaving tubes are playing
in the fight against the Axis is rev-
ealed by statistics released this week

Board.

tubes will line the water canteens used
by the armed forces in Libya and
Egypt, points out W. Harold McPhil-

ointment tube to line 20 water bottles
from 250 tubes the time for one Bol-

No Extra Rations
for Picnickers
Rationed foods for picnics will have
to be provided from the ration books
of the picnickers. This announcement
is made from the Ration Administra-
tion of the Wartime Prices and
Trade Board in anticipation of the
holiday season.

Drowned in Maitland
LAC ;Robert Whitehead, 28 -year-old
member of the Royal Air Force at
No. 81 School of Navigation, Port
Albert, father of a five -months old
child, Mary Lou; was drowned in the
Maitland River, a mile and a half east
of Goderich on Saturday afternoon,
His body was recovered a short time
later.
The airman had been spending the
afternoon with his wife and child at
the river and went in wading at
Pipther's Dain. After being in the
swirling water for a few minutes he
got into difficulties and cried for
help. Three young Goderich boys came
to his assistance but were too late
and about two hours later found the
body in a hole from ten to fifteen
feet deep, It was learned that the
young airman could not swim.
The body will be interred in the
airmen's -plot ,in the Maitland eeme.

The Maitland River is high at pre-
sent due to rains in recent weeks. At
the scene of the tragedy the water is
flowing swiftly and. the river bed in
that area is full of treacherous holes.
It has been the scene of a number
of drownings, the last one happening
two years ago when a child lost its '
life.

PICTURING PETS
For better animal pictures, photograph your pets at their own
eye -level.
PICTURING pets: is something
that I think every photographer
enjoys. Try it, and I know you'll
find fun and interest in shooting
them—with a canners, of course.
Here's what I suggest, First,
work alone with the animal; or, if
not alone, with just one assistant
at the most. When you attempt
picture snaking with too many
people around it may prove dis-
trading to your subject.
Next, you'll soon learn that it
will make things easier for you if
you place the anneal in such a posi-
tion that he can't move about too
much. For instance, if puppies and
kittens are placed on top of a box or
stool which is high enough so they
are reluctant to jump down, you'll
find it's not so hard to catch them
in a cute or interesting pose.,•
Point three, in the technique of,
• animal photography, is to do your
ppretire retaking at the subject's eye -
level -•'.as in our illustration. Anis
mats viewed from above, even from
our own eye -level, do not often
make pleasing pictures. Usually
they appear too foreshortened. They
normally look much more natural,
when photographed from a low
point of view.
Fourth, keep your backgrounds
simple. Our illustration probably
would have been hnproved some-
what if the area behind the subject
wasn't cluttered up with branches.
Outdoors there's no better backdrop
than the sky. Use it often.
Finally, T'd suggest that you use
a fairly high shutter speed -1/100
second or higher is advisable—to
stop any unexpected movement on
the part of your subject. If your
camera hasn't that fast a shutter,
you'll still be able to drake first
rate animal pictures if you do
your snapshooting during your pet's
quieter moments, Why not get out
your camera and try it, today?
