In the inter- ests of the inventor and of the On- tario Agrieultural College an ex- planation seems neeessary, and the fallowing is sent in by Ian MacLeod, District Representative. 1 curing a monopoly on the process though any company or individual may use it under government license. Stated briefly, the process is one of pasteurizing the honey sit a cer- tain definite temperature to prevent fermentation and then cooling 'it rap- idly to avoid lass ,of flavour. Ten per cent of $xeviously processed hon- ey is stirred; into the liquid honey af- ter it is cooled. This acts as a start- er which promotes rapid granulation s'o that within a few days, at a louver temperature, the whole mass takes on a fine, smooth, uniform, semi- solid texture; is sofa from fermenta- ;ti.on, and r+etains its natural dei'iciens flavour. This processed honey is vory satisfactory for table and kitch- en ruse.
