Chateau Frontenac Chef in New York
Hello Homemakers! This is al-
ways a difficult time of yeas' for
the homemaker who likes to
serve fresh vegetables yet ser-'
iously tries to keep within the
limits of a food budget.
Many •inverting imparted vege-
tables are available for those who
are. not on a slim budget, while
our winterised storage vegetables
do not leak appetizing. The
best way to overcome this in-
between season is to make use
of canned vegetables and, when
possible, combine a canned one
with a fresh vegetable. Canned
diced carrots with fresh cooked
celery or canned peas with cubed
turnips are interesting and full
of flavour if the canned ones are
only heated hot and mixed with
the fresh cooked ones'.at the last
minute,
To make the best of old potat-
oes prepare them as scalloped or
creamed with a little diced onion.
• Then, too, potatoes, whipped
creamy with milk and lightly
seasoned with nutmeg tend to
take a new lease on life,
This is also the time of year
to serve your own home -canned
fruit and vegetables. Upside-
down Cake, Fruit Gingerbread
or Fruit Casserole with a biscuit
or pastry topping provide a
hearty dessert that is economical
too.
Tomatoes and New Cabbage
21/2 cups canned tomatoes
3 cups shredded cabbage
1 tsp. sugar
1/4 tsp. salt
dash of pepper
11/2 tbsps. flour
2 tbsps. butter
Cook the shredded cabbage in
a small, amount of boiling salt
water for 7 minutes. Drain cab -
nage. Pour 1/4 cup liquid from
tomatoes and, stir into sugar, salt,
pepper and flour. Add the re-
mainder of the tomatoes to the
oabbage and heat to simmering.
Blend in the flour paste and cook
until 'thickened. Acid butter and
serve. Makes 6 servings.
Parsnips with Tomato Sauce
4 large parsnips
11/4 cups tomato juice
cup diced celery
1 onion, sliced
1 tsp. salt
dash p1 pepper
2 whole cloves
1 bay leaf
Wash, peel and dice the par-
snips. Parboil parsnips in salt
water for 15 minutes. Drain.
Blend other ingredients and sim-
mer far 10 minutes. Strain end
add to parsnips for 10 minutes
and serve .hot. Makes 6 servings.

Chef Ernest Schmid of the Chateau Frontenac Hotel,
Quebec City, carves a delicate swan from a 350 -pound block
of ice at the Chambord Resturant, New York. He presided
over the kitchens there for one week, exhibiting his' culinary
art in an international gourmet festival to commemorate
the 2,000th anniversary of the founding of Paris. The 34 -
year -old chef was born in Switzerland and has been at the
Chateau, where his reputation has become internationally
famous among epicures for the past three years.

x cup vinegar
1 tbsp. butter
1/4 tsp. salt
Blend sugar, cornstarch, salt
and vinegar. Boil together five
minutes. Add beets and butter
and reheat.
Cook fresh string beans 15
minutes, drain and turn out on a
platter. Then pour Harvard beets
around string beans.

Peach Upside -Down Cake
(Requested by Mrs. E. D.)
2 cups canned peaches
14 cup melted butter
% cup brown sugar
3/4 cup shortening
3/2 cup granulated sugar
1/6 tsp. almond extract
1 beaten egg
11/2 cups sifted cake flour
1/4 tsp. salt
21/2 taps. baking powder
3/s cup milk
Preheat electric oven to 350°.
Drain peaches. Arrange in greas-
ed eight -inch square cake pan.
Combine butter and brown sug-
ar, spread over peaches.
To Make Batter:
Thoroughly cream shortening
and granulated sugar. Add al-
mond extract and beaten egg.
Beat well, Add sifted dry in-
gredients alternately with milk,
mixing until smooth. Pour bat-
ter over peaches, spreading even-
ly to corners.
Bake at 350° for 40 minutes or
until cake is shrunken away
from sides of pan and top Is
springy to the touch. Remove
from oven. Let stand for one
minute, then turn on to plate.
Serve warm, cut in squares, top-
ped with a little whipped cream
or with pouring cream.
Banana Gingerbread

1/2 cup butter
1/2 cup brown sugar
2 eggs, well beaten
1i, cup molasses
1/4 cup corn syrup
4 tsp, baking soda
2 tsps. baking powder
A plebiscite for property own-
ers of Grand Bend to decide
whether the village Willi become
part of Lambton or Huron County,
will be held not later than May
28, a joint committee from the
two county councils has decided
Voters will be limited to own-
ers of property within the vil-
lage, as with money by-laws, the
committee deoidted.
A plebiscite was necessary if
the counties had not decided the
question within six months after
the petition to join Lambton
County. The deadline was April
23. The police village becomes
an incorporated village June 24,
three months after a Lambton
by-law was published in The On-
tario Gazette. '
As an. incorporated village it
can be in only one county.
Committee. members, still could
not agree on whether the part
now in Huron County would
escape the Canadian Temperance
Act which allows drinking in
public. "They will still be under
the CTA, though I would like to
see them away from it. I don't
like it myself," said Arthur
Nicholson, Huron warden, in an
interview. Others felt the act
would become void in the
village.
Warden Nicholson said after
the meeting that Huron might try
to propagandize its side of the
question. "All the propaganda
has been on the other side," he
said. Huron would first inform
Lambton of any action it plan-
ned, he said.
Voting will be heldat two
polls, both in Grand Bend Town
Hall. Hours will be from 9 a.m.
to 6 p.m. Standard Time.
Proposed wording the balldt
was: "When Grand Bend is erect-
ed to incorporated village status,
wound: you favor becoming part
of the county of (A) Huron, (B)
Lambton?"

RCAF Radar Section
With the kind permission and
welcome of W/C R. F. Miller,
AFC, commanding officer, RCAF
Station, Clinton, and co-operation
of W/C B. G. Miller, chief in-
structor, R. and C. School, the
London centre of the Royal Ast-
ronomical Society visited the
school for an evening of infor-
mation on radar principles.
F/L R. Fletcher, O.C. of the
Radar Section, . explained radar
principles before the group com-
menced the tour. Films on the
basic principles of radar, and on
radar as used in the RCAF, pre-
ceded the demonstration under
the 'supervision of Cpl. G. Pratt,
F/S P. G. O'Neill and Sgt. T.
Jackson. Demonstrations were
given to show the uses of radar
as an aid to navigation and
blind flying.
Synthetic signals were simulat-
ed to show what is seen in actual
flight. Further demonstrations
were shown onthe methods of
actually tracking aircraft in
flight, and the long range radar
that is used for trans -oceanic
crossings.

molasses, corn syrup and milk
and add to the above mixture al-
ternately with the stilted dry in-
gredients. Turn into loaf pan,
Bake in electric oven at 350°
for about 114 hours.
When cool, place the following
over the top:

3 tbsps. fruit sugar

County Black and White Show,
will be held in conjunction with
Blyth Fall Fair, on Sept. 19, it
was decided at a meeting of the
officers add directors of Huron
County Holstein Club in the
Agricultural Office, Clinton.
Howard Trewartha presided. The
meeting decided to sponsor the
Holstein Calf Club again this
year.
Plans were made for a tour
the first week in June of the
Holstein Breeders, and of the an-
nual "Twilight meeting" to be
held at the Jarrott Bros. farm,
Kippen, on June 28.
