Fruit Fritters Any kind of fruit, either fresh or tinned, can be used for fritters. First make a simple batter by mixing about half a pound of flour with half a pint ; of water till thick and creamy. Melt two ounces of butter and add it to the mixture by degrees. Whisk the whites of te- eggs and stir them in very s lightly. Then take six apples or three oranges, with the peel and pips removed, or the same weight in tinned apricots or pineapples, cut in email pieces. Sprinkle the fruit with sugar some time before, then dip each piece in batter, fry them and serve with:sifted sugar. 'Time, six or seven minutes.
