is a very busy place at present, as

HOMEMADE EXTRACTS.
These Are Reliable and Are Quite Easy
to Mix When Needed.
Homemade extracts may be prepay
ed thus:
Buy from a reliable druggist oils of
the following fruits and spices by the
ounce: Nutmeg, cloves, lemon, orange,
pineapple, raspberry, strawberry, bap:
na and wintergreen.
One ounce added to a pint of grain
alcohol makes an extract equal to the
Choicest brands sold at the store.
You can make a lemon extract also
in the following way: Take fresh lem-
ons with a thick skin and plenty of oil.
Dampen a clean cloth with cold wa-
ter and wipe the lemons carefully, so
as not to start the oil. With a sharp
knife shave off the thin yellow rind
and' put in a wide mouthed bottle and
cover with the best alcohol. .
Let It stand overnight, then pour off
the extract into another bottle. Over
the peel in the other bottle pour a
tablespoonful of cold water for each
peel used. Shake well and add the
pater to the bottle containing the flit.

An excellent substitute for fresh
lemon juice' for flavorings and for lemt
onade may be made in the following
way: Shave off the yellow peel as
thinly as possible. Remove the thick
white inner peel and throw away.
Slice the lemon thinly and place with
the yellow peel in a glass jar. :Cover
with a quart of vinegar and let stand
for ten days. Strain, bottle and cork
tightly. tee one or two tablespoonfuls
to a glass and sweeten to taste.
