the recipes used by the pioneers for
preserving fruit without sugar has
brought me replies from all parts of
the Dominion. Although the methods'
differ slightly in detail they are prac-
tically the same. Oe course many of
our grandmothers th'icd their fruit, but
their methods :have already been de-
scribed in the press this season, and
are so simple that they shotild be with-
inh
t e capacity of any housewife who
can boil water without burning it.
Here is a recipe for preserving black-
berries and plums that is guaranteed
to keep then fresh for any reasonable
length • of time.
Take a deep Stone crock, one that
holds five or six gallons, and fill it
,with plums or berries that are not
too, ripe, Place over them a board
or plate with a Weight on it, prefer•
ably a good smooth stone which is
eaiiily cleaned, and then fill the crock
to overflowing with hard water, 13e
sure that the weight rs heavy enough
to.keep ,the plums under the water or
they will spoil. There will be a scum
formed on top of the crock which
anust be removed before using the.
;fruit which will be found ae fresh as
;when put up. Rhubarb cut in lengths
to fit the Crock will beep the same

pave canned tomatoes, apples, rhu-
barb and plums without sugar and
have had good' suecess. After the
fruit has been cleaned and prepared
kin the usual way Rll the jars as full
as possible, shaking the fruit down
,and packing it tightly, then place
;rubbers and tope on tightly, put as,
many jars as will all the bottom of
a wash boiler, with a board and heavy
weight over then: to Bold .them down,
Pour in as much cold water as will
cover the tops of the jars and boil
twenty minutes after the water has

That would probably preserve the
fruit but the very mention of alum
puckers my mouth, and I doubt if'
fruit put up in this way would be
relished. However, the housewtves
who think sugar Is too dear to use
this season need not be without fruit.
Several to whom I have shown these
'recipes say they are going to try them•:
anyway. for 1t would be a luxury to,
lraye fresh blackberries and; cream or
fresh plums in the winter titre.
