Hello Homemakena.! Can you im-
agine eating porridge without milk
or cream? Well—it's almost as im-
portant to serve puddings accomp-
anied by a sauce, Every kitchen
executive should learn to make a
variety of dessert sauces. If she
wants to serve dnespensive, good
meals. It's such a good way of
stretching the food dollar and con
serving waste. that bit of slightly
dry cake can be re -conditioned and
served as pudding -simply steam
over a pot ofpotatoes and drench
with plenty of hot chocolate of
flavoured sauce,
Now a hard sauce should be a soft
huffy sauce; a custard sauce should
be smooth not curdled and a fudge
sauce should be heavy, not crystal-
line. For variation, if it's a plata
arilde pudding, dust a little nutmaa
Into the sYruP--and for a rich steam-
ed pudding try g burnt sugar sauce
once in a while for a little different

hard sauce or a fruit hard sauce.

You can serve It in n dozen different
ways—hat or cold on plain or rich

omical of all dessert toppings is the
plain sugar sauce. A springling of
lemon rind or a dash of einnanyoa
for fruit puddings, or apple cider for
the plain cottage pudding makes
this sauce varied and delectable
;Cereal puddings are beat topped
with sieved apricots or prunes, fold-
ed into stiffly -beaten egg whites ar
whipped cream.
RECIPES
Raisin Sauce
1 cup seeded raisins, chapped fine
1% cups cold water
3 cup sugar
13 tb$. lemon juice

TAKE A TIP
1. For two servings o Apricot
Sauce; allow one-quarter oa cup of
stradned amricobs for one-quarter pup
Whipped cream or one beaten egg

2. If cocoa is to be substituted for
one ounce of chocolate in a sauce
recipe, use one-quarter cup cocoa.

Death Of
Mrs. Austin 'Dohnage
The community was saddened by
the death c;t Mrs. Austin Dolmage
which occurred about 4.30 o'clock an.
Tuesday afternoon, Nov. llth atter
an illness since last April, llrsrpol-
ulage had lived in this community
all her life and her passing is deeply
reit, She was formerly Maude Low-
rie, daughter of the late Mr- and
Mrs. Charles Lowrie, and was born
in 1591 on lot 2, concession 9, Hu-
lett. After her marriage in 1912 she
resided on the adjoining faun, tot 1.
of the same. concession. Besides her
husband She is survived by three
sous, William of I3u1lett, Roy, at
home and Harvey of McKillop; a
(blighter Florence, ..died 23 years
ago. Two sisters survive, Mrs. Wnt,
f,eiver, of Rufett, and Mrs. Sidney
Dolmage of Seafortlt; ..a brother,
William Lowrie, predeceased her 29
years ago. gibe funeral took place
on friday afternoon at twa o'clock
from her tateresidence, ftev. W. J.
Patton officiating, Interment took
place in MaiDandbank cemetery, Six
nephewe were pallbearers. Steuart
Dolntage, Russell Dolmage, Leslie
Dolmage, Allen Dolmage Reg. Dot -
mage and Ross Leiper.
