PICKLE TIME
Pltfltles add zest to the meal.
There are many old atandl-bys, but
some new combinations and flavours
are always interesting. The
loving recipes have been tested by
the 'Consumer Section, Dominion
Depailtntent of Agriculture:
Whole Green Tomatoes
1 gallon small green tomatoes
k
2 cups cider vinegar
4 cups brawn suga r
1 teaspoon salt
1 teaspoon mixed pickle spice
1 teaspoon celery seed
10 whole cloves
Cook tomatoes 12 minutes in boiling
water, a few at a time. l.emove each
.tomato carefully, drain thoroughly,
and place in jars. Make a syrup of
other ingredients. Boil 5 minutes..
Strain over tomatoes 'Seal tightly,
Uncooked Vegetaple Setae Pickle
1 peck ripe tomatoes
2 large sweet red peppers
2 large sweet green peppers
4 cups chopped onions
4 stalks celery
2 cups salt
2 tablespoons cloves
2 tablespoons pepper corns
1 teaspoon mixed pickle spice
1 teaspoon celery seed
2 quarts. vinegar
4 cups sugar
Peel and chap tomatoes. Chop pep-
pers, celery and onion coarsely. Mix
vegetables, add salt, and let stand
overnight. poll vinegar, sugar and
spices 5 minutes. Let stand over-
night. Drain vegetables thoroughly.
Mix with strained vinegar syrup.
Pour into sterilized jars and seal.
Tbis makes an excellent salad for
winter use if jellied with plain gela•
tine. If used, as a relish, excess
juice may be poured off and used
as seasoning for tomato cocktail.
Ice Pickles
4 quarts thinly sliced cucumbers
1 cup thinly sliced small onions
1 green pepper cut in small pieces
'/e cup cup salt
Pickle Mixture
2 cups sugar

1 teaspoon celery seed
1 teaspoon mustard seed
1 stick cinnamon
10 cloves
2/ cups vinegar
Mix vege.ables, Arrange in layers,
sprinkling each layer with salt and
crushed ice or ice cubes. Let stand 3
hours. Drain thoroughly. Edit syeup
5 minutes. Remobe cinnamon and,
cloves. Add vegetables and heat to
scalding (do not boil). Fill sterilized
jars and seal at once.
Winter Salad
1 cenliuower
cabbage
115 cucumber (large)
1 quart onions
1 quart green tomatoes
2 heads celery
2 quarts vinegar
1 cup flour
3, cups broyn sugar
1 teaspoon tumerie
1 teaspoon celery seed
1/a cup mustard
Prepare all vegetables by putt ng
them through the food chopper.
Allow to stand in salt brine over-
night. Then boil for 10 minutes in
brine and sprain. Boil vinegar, mix
flour, brown sugar, mustard, tum er-
ic and celery seed In enough cold
vinegar to make a paste. Ad dto hot
vinegar to make a paste. Add to hot
thicken. Pour over veg.etabies.
Mix well and bottle,
