RIBBON FRUIT CAKE
Dark Fruit Cake Mixture
21h CUPS stfited flour
1 teaspoon baking powder
1/( teaspon cloves
Ye teaspoon each cinnamon, nut-
rneg, anti allspice
1 teaspoon salt
2 cups seedless raisins
2 cups currents
1i, cups finely cut citron
1?%,% cups chopped walnuts
1 cum butter or other shortening
13 cups sugar
6 egg yolks, unbeaten

Sift dour once, measure, add bak-
ing pomder spices, and salt„ and sift
together three times. Sift` cup of
flout, mixture over fruits and nuts,
mixing well, Cream butter thorough-
ly, add sugar gradually, and cream
together until light and, fluffy. Add
egg yolks,, one at a time, beating
thoroughly after each. Add flour
alternately with coffee, hating thor-
oughly --after each addition. Add
fruit mixture and mix well,
Light Fruit Cake Mixture
2141 cups sifted cake flour
1 teaspoon baking powder
1 teaenoon salt
24 cup finely cut candled cherries
% cup finely cut candied. Pine-
apple

monds
cup cocoanut, pueaniuni shred,
finely cut
2 teaspoons, grated lemon rind
% cup butter or other shortening
1 cup sugar
6 egg whites, unbeaten
2 tablespoons. lemon juice
Sift flour once, measure ,add bak-
ing powder and salt, and sift to-
gehter three tines. Sift ry cup of
flour mixture over fruits, nuts, and
coconut, mixing thoroughly. Add
lemon. rind to butter and cream
thoroughly add sugar gradually
creaming until light and: fluffy. Add
3 egg whites, ane at a time, beating
thoroughly after each. Add lemon
juice, then flour, alternately with
remaining egg whites, beating thor-
oughly after each addition. Add
fruit mixture and mix well. To bake,
use two S x 4 x 3 -inch pans which
have been greased, Lined with heavy
paper. and again greased. Spread 1h
of dark mixture in each pan, cover
each with 1n of Light mixture, then
top each with % of remaining dark
mixture. Bake in slow oven (250 de-
grees, P.) 4?. hours, or until done.
