Here is our suggestion of the plain
dishes for a evilly fall day — Beef-
steak and Kidney Pie: It lies

BEEFSTEAK AND KIDNEY PIE
4 lamb kidneys
1 pound; l'oundsteak, cut in
Pieces
* cup sliced onions
2 tablespoons- butter
3* cues boiling water
Brussels, Ont.

i/s teaspoon thyme
1 bay lead
3 Allspice berries
2 caps ,mushrooms, cut in
pieces

1 cup sifted flour
1 teapsoon baking powder
ReasPoon salt
3 tablespoons butter or other
shortening
6 tablespoons milk (about)
Soak kidney in settee water 1
hour. Bronvn steak and onions la 1
tablespoon batter; add water, salt,
and pelsper 'Tie thyme, bay leaf,
and araleice= in. small cloth; add to
meat; ,cover and simmer about 1
hour, or until nearly done, Re-
move bags, c1 spice,: Slice; kidneys
and; saute with musbrooms in re-
maining tolble l oou butter. Add
to meat mixture; then add tapioca
and Woreestenshire sauce and bring
to a full boil, stirring constantly.
Turn into greased oasserole. Sift
flour once, measure, add baking

, 'Cider vinegar is formed by ire
action of acetic acid bacteria on

sentially, vinegar is a dilute solu-
tion of acetic acid, but, since it is
the product oe definite biological
fermentation of sound fruit juice, it
contains, many flavours and other
substances in addition to those pro-
duced during the fermentation and
storage,
The manufacture of quality cider
vinegar in commercial quantities is
not easyy. The entire process must
,be carefully and scientifically con-
trolled, throughout the vinegar
made without this coutrol is apt to
be /over in acid than desirable and
of inferior flavour. Cider vinegar
properly made is equal to malt or
any other type of vinegar, The
Gcluadian Food and Drug Act lays,
down that all types of vinegar must
have an acetic acid strength greater
than 3.5 per cent. Most vinegars
on the market are well above the
legal minimum, usually having an
acetic acid content of 4.5 to 5 per
cent. ,
