SPONGE CAKE NOT A LUXURY
Can Be a Frequent Treat When

ECONOMY SPONGE CAKE
i, 11/s cups sifted cake flour
14t teaspoonte double-acting bak-
ing powder
1/z teaspoon salt
1 cup sugar
2 eggs, beaten until thick and
light
1 tablespoon lemon juice
5 tablespoons boilinp water
Sift flour once, measure, add baking
powder and salt, and sift together
three times. Add sugar gradualll
to beaten eggs, beating well. Add ,
lemon juice. Fold in flour, alterns,t-
ely with water, mixing quickly until
smooth,, Bake in two ungreased 8.
inch, layer pans in moderate oven
(376 F.) 20 minutes, or until done.
Remove from oven and invert pans
30 minutes, or until cold,

Thick salad dressing
Salt, Pepper
Crisp lettuce or cress
Combine cabbage, carrot, fruit
and nutmeats. Toss ingredients to
gether lightly- with thick salad

Council
Council met on June 511 as a
Court of Revision on the Assess
menu Roll, Members• a1.1 present
but Mr. Black. who is at present
holidaying in the West. Having
been duly constituted as a Cour;
the Clerk reported that for the
second consecutive year, no appeals
had been received.
On motion of Ruddy and Beecroft
the Court of Revision was then
closed and that the assessment roll
be adopted as the roll for 1939.
Council resumed and ordinary
business proceeded with. Minutes
of last meeting were read and ap-
proved,
- The Reeve reported on matters of
interest which had taken place at
the last meeting of County Council
and incidentally remarked that
there would be no change this
year in the county rate but won_1_d
be the same as. in 1938.
Mess King and ,Spieran of Ethel
addressed the Council in reference
to the killing of weeds, on the town-
ship roads giving an estimate of
the cost of this work. Council were
of the opinion that something
would have to he done to control
this menace and, it is expected that
some of the roads will be treated
a little later in the season.
On motion of Beecroft McDow-
el Ithe collector was relieved of any
further duties in connection with
his office, who reported that be.

The U. S. Agriculture Department
bureau of home economics hes com-
pleted a two-year study of 'why
mothers find it so difficult to buy
clothing for their children that will
fit them.
Results of the survey, among
150,000 children by far the most
comprehensive ever wade, were
made available to clothing manu-
facturers by Miss Ruth: O'Brien of
the bureau. It may result in exten-
sive changes in the manufacture of
children's clothing, she said.
Three Alternatives
Miss O'Brien recommended' that
the old-style practice of .peaking
