merely an extra helping of vege-
tables at meals. Wise llomentalcers
will plan alternative foods to do the
job that meat does — "stick :a your
ribs," as the men say.
In meat, you really get four food
values: (1) protein for buiiling ap
and repairing body tissues, (2) iron
for red blood cells and c trrying
oxygen (3) fat for heat and energy,
and (4) B vitamins for good appe-
tite
and nerves. As you know. dif-
ferent foods have different food
values and some have protein, iron
and B vitamin values similar to
those contained in meat. The fol
lowing is a list of meat alternatives.
poultry, fish, eggs, cheese ( which
contains small amounts of iron),
dried peas, beans, green vegetables
and potatoes. Aind don't forget the
meat "extras" — liver, heart, kid-
ney, tripe and grain — so cxceP-
tioually rich in minerals and under
no government restrictions.
After your busy day's work an
old favourite recipe easily prepared
and satisfyingly flavoured will keep
your wheels and cogs in good re-
pair. We suggest eggs: om'lette,
scratmlbled, poached, devilled scal-
loped, curried, fricassed etc.;
cheese; fonue omelette, souffle,
macaroni; fish: cakes croquettes,
creamed creoled, fried, baked etc.
One important tip. to remember

Rice Rarebit

1 Lb. butter, 1 Ib. Hour 14,
tsp. dry mustard, % tsp. salt,
few grains pepper, 1 cup milk,
l4, 1b, cheese diced, 1 cup cook-
ed rice, % cup chopped celery.
Make a sauce tram butter, flour
mustard, salt, pepper and milk.
Turn element "Off". Add cheese
and s.tdr until it is melted and mix-
ture is 'smooth. Add rice and celery.
Serve in toast cases or on slices of
crisp toast.
Crispy Fish Cakes
1% cups salt cod, shredded,
3 cups potatoes diced, 3 onions
sliced, 1% tbs. baking fat. %
tsp. pepper. 1 egg wall beaten,
Soak codfish in cold water for %
hour. Drain. Put fish, potatoes and
onions in saucepan, cover with boil-
ing water and cook until putatoes
are tender (about 10 minutes).
Pour off the water and shake sauce-
pan over heat to fiuff potatoes,
Mash thoroughly, add baking fat,
pepper and egg. Beat until light
and fluffy and shape mixture into
fiat cakes. Brown on both sides in
hat fat, Serves 6.

ing lightly. Season to taste. Serve
hot, Serves 6.

Oven Baked Chicken
(Requested by Mrs. M. D. C.)
1 chicken cut up, mills, flour,
salt and pepper, 1 cup for fry-
ing, 1 tb. onion chopped fine,
2 cups top milk.
Dip chiken in milk and seasoned
floor and fry in skillet until
browned, 'Sprinkle chopped onion
over top of chicken arranged in
casserole. Pour milk over top and
bake in electric oven 826 degrees
until the chicken is tender, aboat 2
hours and the milk is a thick sauce.

Last Rites In Wingham
For Frederick Bennett
The death occurred suddenly in
Wingham of Frederick Bennett in
his 78111 year,
For many years Mr. Bennett re-
sided in Morris township at the
home of the late Mr. and Mrs,
Richard Proctor, 4th concession,
and also at the home of the late
William Geddes, 8rd 'concession,
He was quiet in disposition and re•
speeted by ail who knew him,
The funeral took place Tuesday
from the funeral dome of I-1, Fry-
fog•e1, of Winghatn, with burial In
Wingham cemetery. Mr, Bennett
had no relatives in this, country

World War was seriously under-
mined by the acute shortage of
Fats brought about by the British
blocade. Proof of this is found in
the fact that the methodical Ger-
mans started a Fat Salvage program
as far back as 1937, They have
employed elaborate methods to
conserve every pound of Waste Fats
and Oils to avoid a repetition of
their .experience in 1918 To -day in
Germany, the Salvage of Fats and
Oils is the Gestapo way—By
