The Brussels Post, 1951-10-10, Page 6Stars In Full Glory It is strange that on the whole lite stars visible in winter are so Much more brilliant than the sum- mer stars. It is when the nights grow long and cold, and when star gazers in northern latitudes are apt to take only a hasty glance at the sky before retreating to the com- fort of the nearest fireplace -it is then that the full glory of the heav- ens is shown. Bright stars appear in such profusion that they seem to crowd each other from horizon to horizon, shining over the earth with white splendor as they revolve in their remote and unchangeable orbits, Nor is their sudden bril- liance due to the fact that stars thine more brightly through the chin, chill atmosphere of winter, although this may add something to the display, but purely to coinci- dence. The intrinsic brightness of the winter stars is greater than those of summer, The richest galaxy comprises the constellations which are overhead about midnight in December, about ten o'clock in January, and eight in February. They center round that giant figure of Orion which is by far the most splendid group of stars in the skies, a figure so shap- ed that it is easy to see in it exactly . mat the ancients saw there; A warrior, huge in size, heroic in strength encompassing the universe with his mighty strides, It needs no soaring imagination to find the fig- , ore of a giant in Orion's stars. Because of its distinctive shape and because its location is such that )northern observers never see it set, the Great Bear may have been the source of more legends in ancient days than was Orion. It is more widely familiar. Three hundred years ago the ship in a bottle was a popular house orna- ment, and every mariner worth his salt knew how to construct one. The work called for a slight degree of skill and an infinite amount of patience. It is possible to construct a full- rigged model of a sailing ship, three inches high and complete down to the last detail, inside a bottle whose neck is not more than half an inch wide. The best method is by making the model with a hull just small enough to pass through the bottle- neck. The masts are laid flat along the hull and their bases are tipped with glue. Then the hull is pushed through the bottle -neck and the masts and rigging pulled erect with a piece of thread, The glue is left to harden, and when the masts are secured in their upright position the tell-tale thread tan be cut away and the evidence is destroyed. Some of the experts deny that this is the correct method. Just to prove their point, they may be able to produce a ship whose hull alone is larger than the bottle -neck, thus eliminating the thread possibility. In this method the hull is fed through the bottle -neck in sections. As one section is fitted inside, it is painted with glue by a long brush to make a base for the following Lection, The delicate rigging has to be built up inside the bottle with a specially elongated pair of pincers, and this calls for a•great degree of skill than the simple thread method. Essentially it is a piece of beef not fit for roasting -shin, plate, chuck and so on -cooked slowly with vegetables till it becomes fork - tender. French households often enjoy it once a week or even often- er, and I think your family will "go for it" too if made according to the following recipe. 5 * * POT-AU-FEU 4 pounds beef with bone (brisket, ramp, shin, plate, chuck or round) 3 quarts cold water 1 tablespoon salt Bouquet garni (bay leaf, fourth - teaspoon thyme, half -teaspoon peppercorns, three cloves, four sprigs parsley and, few celery leaves, tied in cheesecloth bag) 2 cups mixed chopped vegetables, (onion, carrots, celery, white turnips, parsnip) 6 leeks, white part only 3 carrots, quartered 6 cabbage wedges 6 potatoes, whole or quartered. (1) Place meat in a large soup kettle. Add water, salt and bouquet garni. Bring to a bail, skimming often. Lower temperature and sim- mer till meat is almost tender - four hours or longer. (2) Add chopped vegetables and those cut in larger pieces. Simmer till latter are tender -about forty- five minutes. (3) To serve, remove meat to serving platter and surround with large pieces of vegetables. Keep warm. Serve broth with chopped vegetables as a first course. Any ex= cess may be refrigerated for later use. (Chill. remove fat and use wherever soup stock is required.) Yield: six portions, Note: if a fatty cut of meat is employed, the dish is best made a day in advance, refrigerated and the fat removed be- fore reheating the pot-au-feu and serving, Should any left -over chicken car- cass be available, this, too, may be added to the pot-au-feu along with the raw meat. Or a whole chicken may be cooked at the same time in the broth; it will give something to the stock, and the stock and vege- tables something to it. The chicken may be carefully refrigerated for later meals in salad, creamed, or merely sliced cold, Probably one will only want to include a chicken in the pot is (1) the utensil is very large and (2) food is being prepared for more than two or three persons that today comprise many house- holds. * * Cool fall days may remind you of the richer meats that you have neglected during the summer months, and pork is probably No. 1 on this appettte-satisfying list. Whatever cut you choose, pork should be cooked at a moderate temperature, and cooked thorough- ly. This is an unvarying rule for preparing this pleat -a meat that is obtainable in a wide variety be- cause it is sold both fresh and smoked. If you do not use a meat ther- mometer, allow 30 minutes per pound for pieces of pork weighing five pounds or over, and about 45 minutes per pound for smaller pieces (chops are an exception, re- quiring only about 30 minutes per pound except when a recipe calls for more). BAKED PORK CHOPS AND CORN %-inch thick pork chops Creamed, or scalloped corn Green pepper Pimiento Brown chops in heavy skillet and place on top of casserole of cream- ed whole -kernel corn (it can be fresh, canned or frozen) to which bits of green pepper and pimiento have been added. Cover and bake at 350 degrees F. until chops are ten- der. If you like stuffed pork chops with baked apples, have chops cut thicker (about 1 inch) and trim a little fat off the edges. Brown chops on one side and leave in skillet, brown side up. Pack a generous mount of highly seasoned stuffing over entire crop and put trimmed - off fat on top of stuffing (this makes them self -basting), and bake tor one hour at 350 degrees F. Apples, ready for baking may be put in the same skillet and baked with the chops. For instance, as this is written the New York Giants and Brooklyn Dodgers have just started their 3 -game National League playoff series, and the result of even the first set-to is still in doubt. Therefore we are taking the liberty of repro- ducing here part of our column which appeared way back during the first week in March. First of all we dealt with National League prospects as follows: k * In the National League, Brook- lyn looks to be a cinch. They should have won last year, and probably would have done so but for a late - season slump occasioned, in all probability, by some of the Dodgers getting the not -unusual notion that press clippings can win ball games. ,k * 5 Anyway, the figures show the Dodgers winning by a fairly com- fortable margin, their keenest con- tention coming from the Philadel- phia Phillies, who figure to sag a bit front their 1950 drive -a drive that amazed everybody, including themselves. So that's the way the dope reads -Brooklyn Dodgers, first, Phila- delphia Phillies second. Therefore, with our customary mule -like con- sistency, we are selecting neither of the two. Our pick for the National League Pennant - and, when it comes to that, for the World Series -is the New York Giants. * * Having done its duty by the Na- tional League that March column went on to deal with the junior loop thus: - * * * We turn next to the American League and here we find that the figures make it even easier for a * * prognosticator to choose the win- ner. Boston Red Sox, by as far as a circus press agent can toss the bull, is what it looks like. Steve O'Neill has the pitchers; he has the hitters; and in addition to one of the best infields in baseball - Pesky, Stephens, Doerr and Dropo -he now has added Lou Boudreau -a very handy guy to have around at all times. k * * Yes, indeed, it looks as if Mr. O'Neill might be suffering from what one word -painter described as "a plethora of riches."
