One of the requirements' for ep ee-
bership in the newly organized On-
tario Poultry farm Egg Prncleeers
is that the eggs he gathered a^11
cooled in wire baskets, Ta<'te'e
a reason. The keeping quality +.f
the egg is greatly improved by rap-
id cooling. In a test it was found
that eggs gathered in wooden pail..
'had a temperature in five hou,•e o0
S2 degrees and in ten hours of 655
degrees. Eggs gathered at the,
same time in wire baskets 11.14 a
five-hour temperature of 6711 de-
,grees and a 10 -hour temperatu.`t' of
561 degrees.
