and while yet warm, separate them and put

STRAWBERRY CREAM.—Bruise a quart of
fresh strawberries with a wooden spoon in a
basin, with mix heaping tablespoonfuls of line
sugar ; rub this through a clean hair sieve.
Auld to a pint of whipped 0reanl two ounces
of dissolved isinglass or gelatine ; mixed with
the strained strawberries and put in to
mold.

—There is probably not, among the list of
fruits, one other Variety so hard to maim
look nice when prat up as strawberries. They
are so very fall 0 juice and are so alt to
turn yellow from cooking,. The evening be-

and one of sugar to each pound of strawber-

of juice : drain it -off and boil until it is a

JAM. --Prepare the fruit in the same way,
only put three-fourths of a pou(dof augur to
each pound of fruit. After the juice is put
to boil in the morning, mash the beerics
fore putting putting then] in the boiling juice and
stir constantly for thirty min Mos, when the
jam will be ready to seal up in jaws, or put
In glasses which must be sealed over with
tissue paper and varnished with the white of
egg to keep the air excluded.
Rhubarb anll its Uses,
Housekeepers w-Ol0011le the earliest stalks
of rhubarb to give tone and freshness to
their dishes which at this season become
limited in variety unless Hero is a good

plenty of these preserved and dried fruits
there is 0longing for the sharp, refreshing
acid of the rhubarb, which is healthful as
well as appetizing, A few recipes for its use
are given below
Rn ru-utn PIE. -Two-thirds pint of steered
rhubarb, one largo cup of sugar, the yolks of
two eggs, one tablespoonful of flout'. ilix
all thoroughly and bake in one crust. When
done spread over the top aft'osting made by
beating the two whites evith four table-
spoonfuls of powdered sugar. Return -to the
Droll 10 brown.
RHUBARB PIE.—Pool and slice the stall's,
and after filling the lover ernst turn it up
over the rhubarb around the edge to keep
the juice from running out. Add a little salt
and six or seven tablespoonfuls of sugar.
Sprinkle over Noor before adding the top
Crust which must be pressed down firmly.

A Canadian 'Killed in Denver.
