Flavors and Sauces,
Without doubt " hunger is the beat
sauce,"but It is not true,as mon think,that
a craing for variety ie he sign of a pamper-
ed and unnatural appetite. Even animals
whom we cannot accuse of having "notions,"
have been known to starve in the experi-
menter's band rather than eat a perfectly
nutritious food of whose flavor they had
wearied. Prisoners become eo tired of a too
oft repeated dish that they vomit at the
sight of it.
An Amerioan travelling on the continent
of Europe becomes acquainted with many
new dishes and flavors, and although not all
of them are to his liking, he must conclude
that our cookery, compared, for inotanoe,
with that Of the French, ie very monotonous.
To be sure, we have the advantage of the
"European in that our markets offer us a
greater variety of natural foods, especially
fruits, each having a flavor of its own, and
ilia fact makes us somewhat more indepen-
dent of the art of the cook. Still we have need
for every lesson of thie sort, and especially
in this the case with the poor, who must
keep to the cheapest food materials, whioh
are not in themselves rich in flavor.
Spines and other flavors, whtn not used
to excess, stimulate our digestive organa to
appropriate more easily the food to whioh
they aro added.
In the flavoring of soups and etewe it 0
well to two a number of flavors, letting no
one of them be prominent above the others.
On the other hand, 0 is well to have cer-
tain favorite dishes seasoned always in the
same way, us fresh pork with sage, summer
savory in a bread dressing, &o.
Basting.
When we bake a piece of meat in the oven
we sear the out side in fat, turning the roast
about in a small quantity of fab made hot in
a kettle- We then transfer it, still in the
kettle or pan, to a hob oven whore bhe pro.

tervals we moisten the surface with the fat
in bhe pan. If we did not baste the roast
we would find a thick layer of gray, tasteless
meat inside the outer brown ernst, and in-
deed the whole pleee would dry long before

keep .in the juieee, which, as we know, will
nob mix with the fat, and also that only a
mild degree of heat inay be transmitted to
the interior, In the intervals of our basting
some water is driven out of the meat and
evaporated into steam. The high heat of
the oven expands itself in evaporating this,
in heating the basting fat, and perhaps, in
dgoomposiug part of 0, thus making the
meat "tasty," and so it happens that only a
mild degree of heat is passed into the centra
of the piece. We would hardly believe that
the inside of a roast, with its high pink
oolor, registered only 160 degrees by the
thermometer, yet tris oats he proved by any
one with a chemists' long thermometer.
Hats and Bonnets.

with a row of jet beads and be trimmed with
a puffing of eofb blank gauzy material,
againot which rest a couple of white wings.
In the winter, the brim may be lined with
cardinal satin covered with bleak velvet,
with possibly the addition of a blaok plume,
ar a buroh of tips.
Or the same shape may be purchased in
gray straw, whioh will be stylish for summer
trimmed with dove -colored moire, and etcel
ornaments, while for cold weather, It may
have a bunch of bleak tips nestling among
folds of blank velvet,
Indeed, a blank velvet modeehat is a stand,
by for winter wear. It has the look of soft
warmth that velvet always lentis, and will
last several unisons if carefully worn.

with folds of white cotton crepe, (or other

offer the suggestion that young girls try to
do their own millinery.
The efforts will be clumsy ab drat, but
ability and taste will grow rapidly. Begin
to practise on weekday hats or bonnets.
Pin everything lu place and try on before
fastening permanently. It may be neoeesary
to repeat the operation many times before
the desired effect fa obtaind, A few hours
daily, In the vacation time, epeno in the
private bowing -room of a friend in the busl-
nese, or a little aebiebanoe evenings in the
privaoy of one's own room from some young
girl learning the trade, will repay themselves

One day last week Lady Henry Somerset,
