POTATOES IN VARIOUS WAYS.
Muehed Potatoes -Boil one pint of po-
tatoes, without peeling, until perfect -
1y, done. Peel Lhem while hot. Mash
minutes longer. Set on ice until
ready to serve. Serve with whip.

rooms for their children, and early ac-
custom them to sleeping in a darken-
ed room. Slumber under these won-
ditions is always more refreshing."

one teaspoonful of flnely-chopPOd
parsley, salt ana pepper to taste. Beat
the whites of two eggs stiff and mix
1t with the potato. hill the skins a
little above the edge; brush the top
with yolk of egg end dust with erector
crumbs. Place a vert' small pieoo of
breakfast bacon on top of each one and
set in the oven untilthe crumbs aro a
golden brown. Choeso or grated ham
aro also nice to add. Sometimes the
skin is stuffed with codfish or sausage
meat.
Flied Potatoes -Peel and wash a suf-
ficient quantity for a meal. Cut into
squares or any desirable shape and
soak them for an hour in salted ice
water. Have ready a vessel of very
hot lard. Drain and dry each piece
between towels. Plunge them into
hot fat enough to float them, and fry
until tender a nice brown. Drain and
dust very lightly with salt.
Mill Creek Potatoes -One quart of
EGGS FOR WEAK STOMACHS.
Our cooking schools are teaching that
eggs properly cooked. are not only a
most nourishing food, but what is of
still more importance to
many,
they are very easily digested and as-
similated. A number of
instances have
come under the writer's personal no-
tice, where persons who were ere sine 1

starving to death because of indiges-
tion, aggravated by taking many use-
less dyspepsia nostrums, have been re-
stored first to strength and then to
health by simply confining themselves
wholly, or almost wholly, to a diel
made up of raw or only slightly cook-
ed eggs. Although lax two cases these
victims of indigestion and drugs were se
tar gone from downright starvation
that their whole nervous systems were
shattered, and dootors were unable to
build them up because there seemed
absolutely no strength left upon which
to build. They were simply taking a
raw egg two or three times a day to
begin with, soon able to take them
slightly cooked, and before long were
sufficiently strong to grapple with
and digest other foods. Many unnec-
essary doctor bills could bo saved and
many a broken down constitution
built up if mora properly 000ked eggs
were used in plane of the indigestible,
non -nutritious pies, cakes, oto., we now
feed ourselves and our children.
,. i'HOW TO ESCAPE COLDS.
Colds can be arrested much easier
than is generally supposed. With
persons whose vital forces are vigor-
ous colds are almost entirely due to
carelessness. It is important that
the feet be kept warm and dry and
that the chest and abdomen be
well protected. Care should be taken
to avoid exposure when the stomach
is empty. This is especially necessary.
'Warm flannels and woolens should be
worn, Breathing through the nose
should bo practiced, and drafts should
be strictly avoided. Young people
who denim seem particularly careless
about drafts. Then the head should
be kept dry. Do not wet the hair be-
fore .going into the open air. Any one
careful about these little things will
not be troubled with or,llds.

RULES.
The following are the "Golden Rules
of Health," established by her father,

Boil thio until thick; then pour over
the cherries, Serve cold.
Cherry Souffle, -Into ono pint of hot
milk stir four ounces of flour, let
thicken; remove from thefire and set
aside to 000l. Bath the yolks of four
eggs with two tablespoonfuls of but-
ter, add a pinch of powdered oinnamon
and a little grated nutmeg, Mix in
the milk; add the whites' of the eggs.

as desired. Turn into a souffle -tin
and bake in a quick oven,
Cherry Cream, -Fill china cases half
full of stoned wherries, then fill up
with one ounce of gelatine dissolved in
one-half cupful of milk, sweetened to
taste. Set on ice and serve with
whipped arcane.
Molded Cherries, -Beat the yolks of
three eggs with three tablespoonfuls of
sugar; add one cupful of rich milk, and
cook until thick, remove from the fire,
add one-fourth box of dissolved gela-
tine; stir well and strain. Stir in
one-half Cupful of cream and flavor
with cherry or pineapple. Line the
sides of a dish with lady -fingers, cover
the bottom of it with cherries and
pour in the mixture, ' Continue a
layer of cherries and custard until
the dish is full. Serve very cold with
whipped cream.
raw Irish potatoes, peeled and sliced
very thin. Plane in a buttered pud-
ding dish and add ono tablespoonful of
butter, three eggs beaten in one pint
of rich milk, salt and pepper to taste ;
add milk, if neoessary, to cover pota-
toes. Dot with butter andone strip
of breakfast bacon and bake slowly un-
til tender. If the potatoes cook dry,
add more milk.
Stewed Irish Potatoes -Wash, peel
and slice six potatoes; throw them in
cold water for ten minutes. Than
place them in a stew pan, cover them
with fresh cold water and cook until
tender. New pour off the water and
pour over them a cup of sweet milk or
cream, a little salt, pepper and chop-
ped parsley, and thicken with a lump
of butter rolled in flour. Stew a few
moments and serve in a covered dish.
Sweet or Irish Potato Puffs -Mash
well -boiled potatoes and mix with them
two eggs well beaten, one-fourth cup

of sweet butter and one cup
of hot
milk. Season Irish potatoes with salt
and season sweet potatoes with sugar
and nutmeg to taste. Form into balls
and place on buttered tins. Brush
and

them over with an egg well

in a hot oven.
Southern Sliced Sweet Potatoes -
Cover the bottom of a baking dish
with slides of boiled sweet potatoes.
Season with salt, butter, nutmeg and
brown sugar. Put in another layer
and season and continuo until the dish
is lull. Pour over it one-half cup of
water and a pinch of cloves and sat in
oven twenty or thirty minutes.

town. Ile is a ship builder by trade,
but like many abate living along the

to bis back some twenty-five years ago,
he has, until lately, led a life of more
or Ices suffering. Mr. Perry tale of
his trouble as follows:-" About twen-
ly-five years ago, I strained MY back
severely, and the result was Lhat for
six months following this I could not
Lake a single step without the great-
est agony. I doctored for about a year
with a term doctor and while the pain
was eased. to BOMB extent, the trouble
spread from my back to my hips and
Lege and 11 was almost impossible for
me to get: around. I had to oxeroise
the greatest care when walking, else 1
would fall to tlfo ground, It was not
exactly paralysis, and yet it Was some-
thing very nearly thin to it. For about
twenty-five years T have suffered in
this way, and although I doctored more
or less, and tried many remedies
I could not get relief. One day I
road in a newspaper the particulars of
of cure in a case very like my own,
through the means of Dr. Williams'
Pink Pills, and I determined to try
them. I began their use about two
years ago, feeling that what they had
done in the other ease they would no
doubt do for me. The trouble bad fas-
tened itself so firmly that I did not
hope for a speedy care, but as I found
the pills were helping me I Gelatinised
their nee until I had taken 50111e thir-
ty or more boxes, with the gratifying
result that they did for me what long
years of other treatment failed to do,
restored me to an excellent. measure of
health, and I can now go about almost
as actively as in my young days. I
gladly make known the benefit I have
received, and nope my statement will
give new hope to some other suffer -
HOW QUEENS ARE GREETED.
When Queen Victoria drives through
the streets of London, spectators crowd
the sidewalks to see her pass by. When
the royal liveries are descried in the
distance, there is a loud outburst of
cheering with a deep undertone of
loyal affection. As the carriage draws
near, a few hats may be raised and
handkerchiefs are waved, but the
voices are hushed and the queen is re-
ceived in ailenoe.
The queen smiles graciously, turning
first to one side and then to the other,
and bowing to her subjects. They in
their turn stare at her intently and
are voiceless, while the orowds a long
way in advance are shouting themsel-
ves hoarse. That is the English way
of greeting a queen.
In Italy there is neither cheering
nor shouting when the queen ap-
proaches, but when she bows tirst to
the right and then to the left, the sal-
utatio,l is returned. The crowds aro

let liveries is seen, out when she bends
her head in recognition of her sub-
jects, every.man, ry man and child
seems to regard it as a personal com-
pliment and returns it by bowing low.

Children should always meet with
the father, mother and older members
of the family at the table and never
made to wait, even if company is pres-
ent. The child that has been taught,
"not to do this or that when a visitor
is at the table," cannot be depended
upon to do the right thing at the right
time, but the child that has learned
table manners by imitation, will not
mortify its parents by any misbehavior.
11 is impossible for a child that is in the
habit of eating carelessly suddenly to
reform and don company manners. A
child should be made comfortable at
the table; the chair should be of the
proper height, the knife, fork and spoon
of suitable size.
Children should not lead the conver-
sation; they should be taught never to
interrupt their elders, but they should
be allowed to assist in the conversation
which will teeth them to express their
thoughts intelligently, and parents
should see that they use the best lan-
guage.
The pleasures of a meal are certain-
ly added to by the presence of the lit-
tle ones; and yet we have been present
when the meal was made very dis-
agreeable, because the children must
be scolded and even lvhlpped. If we
want our children at all times to ap-
pear well bred, WO 10081 discourage the
idea, that there are company manners,
and every day manners. There is a
great difference between the gnuine
good manners and sweaty 'good
form." Good manners don't change.
Children can be early taught to eat
quietly; to avoid noises in swallowing
and chewing; to use the fork and not
the knife, that with the fingers can be
taken bread, fruits ana gale ; the
proper use of the napkin, and that
they are not to display any marked
likes and, dislikes. Older members of
the family should be as polite to each
other and to the children, as to any
guest, then you will not be haunted by
the fears, that in some unguarded mo -
maul the chdldxen will bring
them-
selves and you to disgrace, for table
manners "are sure indications of social,
mental and moral culture."

hand, would regard an English crowd
as unmannerly in the presence of
royalty, since it begins by making a
great uproar and ends with little more
than a stolid stare, leaving, as it seems
to him, the queen's salutation virtual-
ly unacknowledged.
Every European capital has its pwn
point of view in its relntions withroy-
alty' ana dignitaries aC state. Even
the crowds of street -loungers in Lon-
don or Rome, Berlin or Paris, have
their own notions of etiquette and pro-
priety.
FEMININE NECKWEAR.
The affectation of things masoulino
in wearing apparel by women has
many and very curious fluctuations.
This is especially notable in the matter
of neckwear. During the entire win-
ter a year ago the up to date and al-
together oorreot young woman wore a
white ascot tie with her tailor made
suit. The last season has been quite
different. Not en ascot has been seen,
but instead, the daintiest, much be-
trimmed and essentially feminine
stocks and ties. Tho linen Dollar has
given plane to little turned down mus-
lin affairs embroidered or hemstitched
and lace edged, ana the whole effect
has seemed quite elaborate and fussy.
The chances are that these generally
becoming articles of nook gear will
hold their own through the early
spring and my lady's cast waist con-
tinue to be trimmed past recognition,
but ..fashion's finger indicates that
plain effects are not forgotten, and
the dainty maid will return to lies
