first. When stiff, add a pint of whip-
ped cream to every two quarts of froz-
en eream, and freeze uetil firm.
Strawberry float. -One quart of fresh
berries after they are hulled and one
quart of fine sugar maenad together.
Beat stiff the whites of six eggs, and
add gradually the berries. Continue to
beat until the mixture will stand up
high. Serve in a glass dish.
Frosted Strawberries.- Beat the
whites of four fresh eggs with six ta-
blespoonfuls of cold water. Seleot large
handsome berries, and leave the hulls
and stems on, dipping each one sep-
arately into the egg, then into a dish
of fine sugar. Let them dry, and then
arrange on a glass dish,
Strawberry creon.-One quart of
ripe berries mashed with one and one-
half cupfuls of white eager. Soak one-
half box of gelatine in enough cold
water to dissolve for one hour. Strain
the berries and add the gelatine, sot
the dish containing thie into a pan of
chapped ice aud beat until it begins to
get thick, then add one pint of whip-
ped cream. Pour in a mould and set
in ice box.
