In bis report regarding the disease trade for 1003, A. W. Grindley, Agent of the Department of Agriculture in Great Britain, makes Domesuggeetione that merit the attention of makers and exporters. He says :—"The cheese sea• eon of 1902 was a most suooeeefal due ; there was a large increase in the mien. tits, and the steady improvement in the quality was so great, that in spite of very heavy supplies the prions realized on the whole were eatiefaotory. The mild sweet palatable Bayern, ae distinguished from the heated and biting abaracter so notioeable in former years, has created a large consumptive demand, which will have a tendency to do away with the disproportion in value between Canadian and English Cheddar. The practice of shipping too new or "green" menet be too emphatioaily condemned as it not only spoils the Bele, but harts the reputation of Canadian obeeee. The salesman as well as the ex porter are to blame for seeding three immatare cheese, and the patrons of faotoriee should theist that their cheese should beheld in the outing room until ibis in such a oondition as will give satisfaotfnn to the British crammer. coon 00arN0 oP ORBBBE. The differentia in the quality of obeeee held in the Government cool caring rooms was very uotiot•able, not only in quality, but in geoeral appearance. This improvement ie due to cool mnriee and "waxing" the cheese which also hue the advantage of preventing a consider• able per°entaee of shrinkage. During the season of 1902 when ,'waxed" cheese fleet appeared ou the British market, some of the Grocers'. Aesooiatione ob jeoted, and even went so far ae to de. wand au ailowanoe in weights, but it was soon proved that there was leas ehriukage, whitb, added to the improved quality and appearance of the cheese, quickly created a brisk demand for cheese coming from the Government curing etatioue, at an advance in pride oompared to cheese doming from ordin- ary faatoriee. BOXING 005055. The pre05ntage of broken boxes was 110t BO high during 1908, although it Still runs very high ranging from 5 to 25 per cent. The falling off in breakage is due to :—(1) Damp Benison, wbioh mattes the boxes less brittle. (2) More care on the part of the Shipping companies in loading, stowing and disobarging oar. goes, this work being closely watched by the -Inepeotore'01 sone I)epesttnent, (8) The gee of boxes of better quality. Tee latter point was very notioeable in cheese coming from the Government oaring stations, the boxes being made of heavier material ; the percentage of brake' boxes did not run above two per tient, whish proves that it is faits economy to buy cheap boxes. Care should be taken not to nee:green, unseasoned boxes as the cheese, particularly the top and bottom, may be damaged in quality from this oanes alone. GRIN BRAND ON 050050. Leading Bribieh importer% ot Canadian oheeae aro in favour of branding cheese indelibly with the month fn whine they are made, Some years ago "September" cheese booame the favorites, but owing to the improvement in the quality of oheeee made during iuly and Augnet, beonght about by the eyetem of 'cool oaring" introduced by .the Department of Ak B)Onitate, the makes ofother menthe have proved to be nearly as good. in quality as Sep ember's'. It is claimed that dneeropulous dealers in Canada a% well 0.5 in Great Britain quote "September"5" at snob low pekes that the supposition is that they are the Make of Other months and any inferiority in quality ie not discovered until after t delivery ili taken. If the month or make,i was branded be the oheeae they Would be 1 seta On their t otdtp, and speetlltto10 99b3 bought °beep lloee 'et July, August, 0110080 or November malted would be debarred from quoting them by sable or otherwise as " leeptember'e." id! u><•tlNerff•it.
